  • The soft open of Cornudas, Texas no April 27th, 2024. The town is now open with the cafe serving food! We still have a long way to go as we scale. Short term rentals, RV park, motel, and more are still needing work.

In the 70s, we lived in Dell City. On our way to El Paso or on the way back dad would stop at Cornudas. There was this beautiful waitress who always had me a cold slice of watermelon. Traveling with mom, we never stopped because there was a beautiful waitress! 😂😂 I wish you success! Lot of memories there!

AHEAD~SODA AND ICED TEA PACKED IN ICE (Big insulated barrels or a converted vintage refrigerated soda box that no longer works.) That and clean restrooms would stop me on a highway in the middle of nowhere every time. I would like to see someone bring back the box lunch again with a cold sandwich, bag of chips/potato salad and a small dessert inside. I do love me an occasional chopped cheese sandwich NY Bodega style also.

Been finding this interesting because about 15-20 years ago I got a flat tire right there, and had to sit in that parking lot for like 9 hours. it was a pretty big ordeal and cost me a fortune to get someone out to fix the tire... Seems like a really neat little place.

You've made real progress. The place now reflects your sizaable investment in time and money. I hope it pays off and along the way you create many fond memories. My first job was working in a K-mart grill. We cleaned the cooking surface of the grill by cranking up the temperature, dumping ice on it, and scraping it with a metal spatula. We took down those metal vents each night to wash them. I slipped once in reaching to pull a vent down and my wrist came down on the hot grill, which left a lasting scar. Closing was a one-man operation that also involved pulling the steam table, washing everything, and returning things to the cooler in a rush to beat the clock.
Once, I was wheeling a metal cart with various items on it to the back to be washed or put away when I slipped on the greasy floor as approached the door. The cart bumped against the door frame and a 5-gallon plastic jar of mustard fell to the floor (we returned the leftover condiments to the big containers each night). The mustard splattered against the door, which had metal venting on the bottom. In frantically cleaning it up, I ran my finger across the metal venting to wipe it off--and sliced the finger open. That was my second scar from working in a kitchen. That was 46 years ago.
The grilling of hot dogs reminded me, we used to have a countertop steamer for quickly heating hot dogs. There was an assistant store manager who requested his hot dogs cooked in the deep fryer. Not healthy no doubt, but I recall it being tasty.

Jon- if grilling the bread is not working out for your cooks then try a small steam table with a roll top cover. That will keep the bread hot without drying it out. You can also keep meat cooked ahead in small batches during peak periods for any specials. As long as your cooks follow the health dept. temperature, rotation and cleanliness standards you will not create a food safety issue.
