We had your Mongolian beef creation for lunch today. Simply fantastic. Lion's mane is hard to get in Zurich. Meanwhile we found a dealer who sells the mushrooms. At first we used button mushrooms as an alternative. But the dish is even better with Lion's Mane! My wife and I love your recipes and cook most of them. Please continue your fantastic work!

Did you know that boiling lions mane liquid is really beneficial! If you can find a way to use the liquid (Maybe use just a little water and flip the lions mane throughout) in like a gravy, it has good health benefits :) Like how pasta water helps sauces emulsify better, Lions mane water helps the brain better :)
