Loved this. I improvised as had the lions mane from my kit but no cauliflower and (unusually for me) no fresh spinach😮. Made a cashew cream sauce and used frozen spinach. Not the same I know but still delicious. Bought a cauliflower now just to make the sauce. Love the Sly Stallone impression 😂
Derek, you say it best when you taste your truly innovative cream sauce: "Delicious!" That is fundamentally what your convictions as a Vegan chef show. You do not need to eat animal based protein nor do others, to consume delicious food. However, if a person cannot evolve and try something new or different from the familiar, they are a lost cause sometimes. I am not Vegan, but I continuously cook and eat delicious plant based food. One only needs to try Indian or Pakistani cuisine to understand that with the best techniques, textures, and flavors, you do not miss meat nor do you need it to thrive.

This looks really healthy. Since I don't have fresh lion's mane, I might sub in seafood and oyster mushrooms which is so tasty.
Curious to hear if this works! Lion's mane isn't available where I live (either fresh or grow kit), so I'm also trying to figure out a good sub....
