Strange profession!…. It only takes one tablespoon of oregano to destroy 30 gallons of food!…. Easier now with cameras!…. Back in the old days?…. We had to learn having the team on our side!…. Back in the old days!…. The good days!…. Cameras may have made your job easier now!…. But nothing beats respect!…. Be fair, be honest!…. And you cannot even imagine how the team will step up for you!…. It does not pay very well!…. Sometimes you are the bad guy?…. Sometimes you are the good guy!…. But everyone knows you will get the job done, Regardless!…. You get the job done!…. 🦉

It only takes a chef to turn his back for one second!…. For some overly ambitious, equally talented, other chef to sabotage a high volume dish!…. Like a 30 gallon dish in a 40 gallon braiser…. For a very important event!…. Weddings, very important banquets, etc!…. If you have a very important event?…. You watch that pot like a hawk!…. It only takes one asshole to add salt!…. I actually had this happen to me!…. Thank God it happened in a casino, and I demanded the security tapes being reviewed!…. I never understood how a person would sabotage hundreds of people’s meal at a wedding!…. Just to get rid of you, and try to slime their way into a position!…. He was actually very talented!…. You will never sharpen your own chef knife, by dulling another chef’s knife!…. He actually got legal charges!…. 👍
