Ingredients:
2 cups of brown sugar (210g)
1 cup of white sugar (200g)
1 cup of whipping cream, half and half, or evaporated milk (240g)
1/4 cup of butter, salted or unsalted (56g)
3 Tbsp of corn syrup (60g)
1 tsp of vanilla extract (5g)
1/8 tsp of salt (0.5g)
2 1/2 cups of pecans (300g)
Tools:
Candy or Meat Thermometer
Bowls
Heavy Bottom Pot
Spatula
Wooden Spoon
Sheet pan
Parchment Paper, Wax Paper, or a Silicone Baking Mat

Pecans are so delicious! Your recipe is sort of similar to candied pecans and Turtles.
I buy the big bag of pecans from Costco and roast them, then have them as a (sometimes non-stop) snack. 😊

My favorite ice cream was pralines and cream flavor.. I can't find it anymore. I'm gonna have to make these and sprinkle some in my frozen custard

THANK YOU so much for pronouncing "Pecan" properly and not saying "pee can"! You must be a Wisconsinite at heart, because we all know that a "pee can" is NOT a nut but what we take in the boat when we go fishing. 😂😂🤣 I'm off to the store to buy some pecans so I can try this recipe.
LOL :) I am surprised at how many different pronunciations there are for it. haha "puh kahn or pick ahn" "pee kahn" "pee can" "puh can"
It's not "pray-lene", it's "praw-lene". Same with crawfish, not crayfish. 😊
Say it however you want. Most of the United States says "pray-lene". Only people in a few States in the South say "Praw lene". Crayfish, Crawfish, and Crawdads are all the same thing, and are commonly said depending on where you live. The World and especially the US is extremely diverse. People say things differently. And that is perfectly okay. :)
Pee can, I thought that’s how it’s pronounced. What!?!!!!
It is pronounced a lot of different ways depending on what part of the country (US) and world you live in haha.
First off I need to let you guys that I pronounce them pee-cans. Don’t want to offend, it’s just the way it is. Been looking for a recipe, and now it’s here. Looking forward to get them started. The look amazing.

Thanks Matt! I have been looking for a recipe. When I was a child in the 70's there was a Mexican restaurant that had these candies at the bottom of the chip basket. They were so good and was a nice treat. I did find the company that made the candies here in Houston, TX. The gentleman taught his granddaughter how to make the candy. Great memories. Will make using your way soon!

Not “prayleen”.
“Prawleen” is correct.
It entirely depends on where you live. Most of the United States says "prayleen" only parts of the south say "prawleen". Either way is correct. There is no 1 correct way to say it. :)
