Thank you for this video. I learned how to make 'pancakes' from my mother (born in Germany before WWI) when I was a youngster, and yes I'm an old man now!. A little flour, some milk, an egg or two....ummm how many pancakes did you want, lol. In fact it wasn't until I was in Boy Scouts, cooking in camp that I became aware that typical American pancakes weren't flat, they were fluffy and my pancakes were called crepes. Much love!
My dad was born in Croatia and when he make Palacinke he would make a filling for them made from cottage cheese or Quark mixed with marmalade or jam. This to me was so delicious and I have yet to see someone else use this type of filling/topping. You should try it, mix whatever amounts of the two ingredients you want but I like a 2:1 ratio of cheese to jam.

Ive been trying to make them like she did but all I could remember was 1 cup of flour per egg, and I couldn't get the consistency of the batter right. She used to put sugar and lemon juice in the filling, you should definitely try it.
