Best Lebanese Namoura from Scratch (Nammura, basbousa)

  • Lebanese Namoura is a traditional dessert that is described as a cake soaked in a sugary syrup.
    Ingredients:
    for sugary syrup:
    1 1/4 cups sugar
    1/2 cup water
    1 tsp fresh lemon juice
    1-2 tsp rose water
    1-2 tsp blossom water
    1 tbsp unsalted butter
    Note: If you want a sweeter, more soaked Namoura, you can double the sugary syrup.
    for batter:
    1 cup all-purpose-flour
    1 1/2 cup semolina (you can find in any middle eastern grocery store)
    1 cup sugar
    1 cup milk (plus 1-2 tbsp if batter was thick)
    1/2 cup vegetable oil
    1 1/2 tsp baking powder
    Baking temperature: 350 degrees Fehrenheits
    time: 40 min
    Broiling at low
    time: ~ 3 min (until top is golden brown)
    tray used: non-stick 12 by 6''
    Bon Appetit :)

    I loved the idea of teaching one word with each new video! What a great idea to learn a new language! Thanks. My husband 81 year old is learning Spanish with my grand daughter. My son lives in different State in USA. So here learning is over the WhatsApp video! He suggested my son and his wife to use one word a day in common talking knowingly using SPANISH word ...that would funa s well as easy to remember and learn a new language! Here I see the same principle applied! Thanks for the video and the new idea!

    Nour, Thank you so much for this recipe. My husband is from Lebanon and loves Namoura. I have tried many recipes and this is the best by far. Every time I make it I double the recipe because it goes so fast.

    Hello Nour! 🐘 I have 2 questions. I am baking the namoura right now. Should namoura be refrigerated after it is finished or can it be left out of refrigerator? Also, what kind of vegetable oil are you using? I try to not cook with canola oil (which is in my vegetable oil mix) and would rather use another type oil. Do you ever use corn oil? At your convenience please let me know. I am SO happy with your recipes. They make my heart smile & so do you! 🌹

      I used Mazola as the vegetable oil. I have never tried the grapeseed oil, but sounds interesting!! It can be left over the counter for a day or so, but refrigeration is best afterwards, as it contains milk. Thank you very much for the comments. Hope you enjoyed the taste of Namoura.

      You are very welcome, Liz😊 I also always substitute whole milk with coconut or almond milk whenever I can! There is a version of this recipe that uses coconut flakes in batter so I was like « coconut milk » will be 2 ingredients in one😊 I made it with both kinds of milk, I definitely preferred the non-dairy version:)

      I don't like blossom water, so I use almond and/or vanilla essence. I also score the cake in diagonal triangles before baking it. Then the syrup can seep in much faster. I've never used flour either. I use coarse amd fine semolina. I also use yogurt.

    Hi the measurement that you quoted and used for the syrup in the video is it the same amount that you poured over the cooked cake? It looked much more in quantity

    Hi! Thank you for this video. Will be making this tonight. One question though - was a non-dairy butter used in this recipe? Or should full dairy butter be used?

      I used a regular dairy one. but non-dairy ones would work just as fine. You can even skip adding the butter to the syrup too, but it does add richness to the flavor:)

      You could probably, but I wouldn't recommend that. It changes the taste.

      Butter adds richness to the flavor and makes the syrup denser for it to sink in the batter. it is optional though and you can definitely skip it:)

      No, haven't tried it yet with almond flour because I do not know the proportions. But I tried your recipe, replacing the rose water with lemon juice.

      It’s only done in this recipe:) butter gives the dough a richer flavor:)

    Followed the recipe but im sorry its to dense and the cake only absorbs the syrup a little bit.

      If you score the cake in triangles before you bake it, it will absorb the syrup much more easily.

      You can also double the syrup too, cutting into triangles definitely helps as well :)

      I believe you can replace it with melted butter or ghee. You definitely need a source of fat.

      @@mariadoloresmedinaortega7605 Si Maria, lo que le puso fue 1 (una) cucharada de mantequilla, que esta ahi en la parte de la receta que se refiere al syrope (miel o almibar) que tienes que hacer primero, antes que el cake... para que este a temperatura muy baja asi que, apenas el cake sale del horno, caliente, puedas verter el syrope sobre el bizcocho... Puedes usar leche fresca entera y/o leche de coco... Espero que te sirva... Saludos...!!!
