It's funny, because depending on how sharp you were trying to make the edges, I figured you were either going to use inset like you did, or subdivde the low poly once, then freeze so you have more polygons to work with. These shapes are always tricky , but I think you did a reaonably good job. Another option is to use the Knife / Cut tool to manually add in support loops, but your mileage may vary in terms of consistency.
Question: In this segment of the video (4:20), could you have used the mean crease option but not turned it all the way up to 1? Would that work or would it cause some new problems?

Mean crease works well, just use a value less than 1 so it isn't clamped completely to the base mesh and still allows some subdivision rounding.

Which way of the 4 do you mean? He showed 3 ways *not* to do it, specifically to show the way you should in the end.
