Chocolate Biscuit Cake/Chocolate Salami
INGREDIENTS
1 cup (8oz/225g) Butter
2 cups (280g/10oz) best-quality semisweet chocolate chips or grated chocolate
1/2 cups (4oz/60g) sugar
¼ cup (30g/1oz)pure cocoa powder
1 tsp Vanilla extract
8 oz biscuits, crushed (graham crackers,digestive, gluten-free OK)
½ cup (4oz/60g) toasted hazelnuts, coarsely chopped
½ cup (4oz/60g) toasted pistachios, coarsely chopped
½ cup (4oz/60g) cranberries (or raisin/ sultanas/cherries)
1 tblps grated orange zest (optional)
2 tablespoons dark rum, bourbon, orange liquoir (optional)
METHOD
1. Melt the chocolate and butter in a large bowl, in the microwave or over a Bain-Marie on a very low flame, stirring.
2. Add in your sugar, cocoa powder and vanilla extract and mix. Follow with your crushed biscuits, toasted nuts, fruit and citrus zest. When crushing the biscuits leave some bits bigger and some bits crushed fine. It gives your salami good texture.
3. Mix all of these ingredients together.
4. Lay cling wrap on your surface. Take some of your mix and shape into a log and wrap tightly in plastic, securing the ends with twisters. You will get 3-4 logs. Refrigerate the for 3 hours or until firm.
5. To decorate like a salami toss it in icing sugar and wrap in twine like in the video. You can leave this step out of you want. It is just an added touch.
6. To serve, unwrap and slice as thick as you want with a serrated knife. The salami slices better when left out of the fridge for a while.
YOU CAN MAKE THIS 2 WEEKS IN ADVANCE.
KEEP IT REFRIGERATED AND WELL WRAPPED.
I'm from Pakistan and my mom has made this throughout my childhood. I don't know if it's popular in Pakistan since I don't live there but oh God this is delicious. It's my favorite dessert of all times. My mom always adds almonds for that extra crunch and uses Marie biscuits. So good to know its popular in Ireland since I plan on going there in the future. Last year i made a version of this using lady fingers where you just lay down the lady fingers, put a chocolate mix over it, another layer of lady fingers, more chocolate and then roll it up! This year though, im definitely trying this one out! Adding nuts, dried fruit and orange zest definitely makes it bigger and bolder and thats what I look for when trying out new recipes! Gemma Stafford WOW! This one of my favorite recipes. My brother-in-law is from Italy and he made this Chocolate Salami for me a couple of months ago. That was the first time I had it. I make it a bit differently but this recipe reminds of what my great grandmother used to make and brings back lovely memories. Thank you. I also always thought it is more of an Eastern European candy as my family cone from Romania and my boyfriend is from the Ukraine and we both grew up on those kind of candies. It is lovely to know it is also popular in Ireland and the UK.
I like to add rum essence and also small pieces of Turkish delight to it.

@@biggerbolderbaking Yeah, isn't it!? Turns out it's popular in so many countries! I'm surprised! I thought it's a Bulgarian thing... My mom showed me how to make it. But we use plain biscuits and no raisins. Splash of rum gives it amazing flavour! (not for kids though, hehehe) 😄

Every year i give chocolate biscuit cake as a gift to friends and family. I let it set in a pudding bowl then decorate it with white fondant and holly. It looks just like a Christmas pudding!

Here in Italy we add egg yolks as well, any kind of nuts, Marsala or some liqueur, even Nutella. I remember when I was a child and my mother made it for me. So good.

On Wikipedia it shows a picture of how they are sold all over Portuguese supermarkets and bakeries... in Turkey we call this mozaik kek (Mosaic cake) we use different type of biscuits but it is basically the same thing yummyy :D

Hi Gemma, Thanks for the video. Quick question on your oz/g measurements. You have (4oz/60g) toasted hazelnuts (and other fruits) 4oz is more like 115g. Should i use 60g or 115g for each of these 3 (hazelnuts, pistachios, cranberries ). I just want to have the right ratio of chocolate to dry/solid ingredients.

Hi Gemma would this work with white chocolate? I think the red cranberries and green pistachios really packed and be nice and festive for Christmas with white chocolate
For more orange flavour soak the dried fruit in orange juice (pure of course) I always do that when making fruit cake :)

Hi Gemma, this looks amazing, but I am confused. In your recipe, 1 cup butter is 225g and 2 cups chocolate is 280g?? Mine is very watery now...Thanks!
