Easy Baked Sushi Cups

  • Baked Sushi Cups 🍣 Made From Plants
    Delicious sushi muffin cups using nori, rice and crispy tofu! These are so good and very easy to make! Much easier than rolling up a sushi roll!
    Ingredients
    16oz extra firm tofu, drained, pressed and cut into cubes
    3/4 cup vegan Mayo
    1 tbsp white sugar
    2 tbsps of sriracha
    1 tbsp soy sauce
    Nori sheets, cut into 1”-2” squares
    Prepared sushi rice
    Sesame seeds, white and black
    Chopped green onions
    Vegetable oil
    Directions
    Preheat oven to 400
    Heat a little oil in a large non stick skillet over medium high heat
    Add in your diced tofu
    Cook turning often until browned, can take anywhere from 10-25 minutes
    Remove from heat and let cool
    In a medium bowl whisk together your vegan Mayo, sriracha, soy sauce and sugar
    Mix well
    Reserve 1/4 cup of sauce for garnish
    Mix your crispy tofu with remaining sauce
    Spray a mini muffin pay with oil
    Place a nori square into muffin pan and fill 1/2 way with sushi rice
    Repeat with remaining nori and rice
    Top each rice muffin with sauced tofu
    Bake in preheated oven for 15 minutes
    Remove from oven
    Drizzle tops with remaining spicy Mayo
    Garnish each with sesame seeds and green onions
    Serve and enjoy!

    Does the rice get crispy in the oven? These look delicious and I love the presentation! Definitely going to try these out! ❤
