Notice the height of the work surface Steve works off of: a little above his navel meaning, probably around 38-40", higher than most counter-tops. This would be an ideal height for working off of to avoid back fatigue. He's well set-up in his kitchen, that's for sure.

Hey Steve! Thanks so much for this recipe! I've been playing with it for months now, and have made several variations. One of the family favorites is to replace the cinnamon filling with about 1/3 cup of good quality blueberry preserves, and make the glaze with 1-2 Tbsp. of fresh lemon juice and the zest of half a lemon in place of the milk and vanilla. My latest variation involves adding 1/4 tsp. nutmeg to the flour and reducing the milk by 1 oz, and adding 1/2 cup plus 2 T. pure canned pumpkin puree (drained on paper towels to remove some of the moisture) to the dough. I mix 1/2 cup of dark brown sugar with 2 tsp. pumpkin pie spice for the filling, and make the glaze using 1 1/2 - 2 tbsp. plain or vanilla yogurt and 2 tbsp. pure maple syrup to 1 1/2 cups powdered sugar. Next up - cake batter cinnamon rolls for my granddaughter's 9th birthday this weekend, then moving on to a version with apple filling and struesel topping, and a peanut butter filled version with chocolate dough and glaze. Red velvet with a cream cheese glaze is on my list for the holidays, too! Thanks for this basic recipe - I'm having a great time! Lisa :D

Hi Steve, my grandmother taught me a nice trick to cut the dough when making cinnamon rolls. Take a piece of sewing thread about 24 inches long. Slide the thread under the dough to the desired thickness of each roll. Bring ends of thread up and cross over the dough. Pull the thread ends in opposite directions through the dough and it slices the dough very easily without squashing it down. I really enjoy your videos! Barb H., Crystal River, FL.

thank you for making this. I made it your way and loved it. My wife is diabetic so made a small change the 2nd time so she could enjoy it too. I replaced the cinnamon sugar with Splenda and cinnamon, and also cut the glazing with Splenda/sugar mixture of 50/50. She loved it.

This is exactly what I've been looking for. I love easy bake cinnamon rolls from scratch. will try this. also you can cut rolls with dental floss too. slip under dough and cross over ends and pull. Done! thanks

My husband is diabetic with a sweet tooth! I made the sweet rolls substituting 1 cup whole wheat flour instead of all white flour. I added a smidge more of yeast hoping to help the whole wheat along. They didn't rise as much but not bad. I used Splenda and cinnamon for the centers and Splenda and milk for the frosting. He really enjoyed them without the huge hike in glucose. Eat sparingly but friendly for a diabetic. Thanks for the great videos!

Today I baked these cinnamon rolls, and they are fabulous. Light, and delicious and not an extra large recipe. 8 or 9 is a perfect number. Thank you for all you share. My heart goes out to you and family for loss of your beloved little dog! My best friend gave me a rat terrier when my daughter was about 7. She was like my other child. When my daughter was little, she slept with me, & so did Lilly(our rat terrier) right between us under the covers. As my daughter got older & had her own bedroom, she wanted Lilly to sleep with her. My daughter really loved her because she had grown up with her, & Lilly loved my daughter like she was her child! I believe she had a stroke, or heart attack 1 night at home. She was very old & showed signs similar to that of my grandmother when she had a major stroke. Anyway Lilly died in just a few minutes. It was very hard on all of us. We lost her 2003 & I haven't got another dog to replace. My grandmother gave my daughter 1 of her cats. Again so sorry for your loss! About your bread: I love all your recipes! You have inspired me to bake BREAD, & NOT be AFRAID!!! Every recipe I have I tried comes out perfect every time! When I make them for family & friends they love the bread & can't believe I didn't buy it from the bakery in town! So "Thank You"!!!! I've been watching alot of Cinnamon Roll videos on YT lately, but this is the easiest one yet. It has to be fas and easy, or I won't bother. I love your overnight proofing method. I think I'll alter your recipe slightly by adding a little melted butter instead of oil when rolling out dough. Will definitely try this one! Laurie

Made these scrumptious rolls and believe these are the best, ever ! Only thing I changed was added maple flavoring to the frosting and ohhh so good ! Thank you for your clear instructions. You are a gifted teacher and baker, a wonderful combination.
This recipe is a keeper. These turned out great, super soft and delicious. I ran out of milk and used plant, also tripled the cinnamon and used brown sugar instead of white due to personal preference.
definitely adding cardamom. I want to see if I can make this similar to the cinnamon rolls from Finland. I've tried their recipes and never quite get a decent rise
Great amount of information in the video, and I love how you show each step and gives tips along the way. Never knew about the plastic bowl scraper technique when working with the dough...maybe with this technique I won't end up with dough stuck between my fingers hahaha. Definitely will give this recipe a try!
You may want to watch "World’s Easiest No-Knead Bread (Introducing “Hands-Free” Technique)". It demonstrates a technique call "roll to coat" that dusts the dough with flour in the bowl... no more sticky dough. Steve
artisanbreadwithstev Finished the cinnamon rolls last night. I unintentionally left the dough rising in the oven for 48 hours, but the rolls were still great. Instead of white sugar I used light brown sugar for the filling. Only somewhat negative comment so far is that they needed more cinnamon. Thanks for the recipe! It was so easy I will be making it again, probably several times within the next week =)
I haven't made these yet but they are my next bake! I can't tell you how proud you make me of my self lol. I have made the No-Knead rolls and Loaf breads many times and I can vouch for they turn out just like yours looks in the videos and that is an accomplishment indeed ;) I use the microwave method for my dough and bottled water and it just works so well! Pre-measuring and organized ingredients for a recipe is called: Mis en Place. That’s professional chefs terminology for Everything organized in its place. All home cooks would do better if they adopted this practice. Less chance of errors or forgetting an important ingredient. Bonus: saves precious time. Stay happy. Keep on cooking and having fun with it.
I like your videos. I haven't made bread in years but when I did it was the kneading kind so i didn't do it often. Just on special occasions. Can't wait to try your method. Sandwich bread in the store is just pure crap anymore. Won't even hold together anymore. Never occurred to me to add vanilla to the dough itself when making sweet dough . I like the idea.

My daughter really loved her because she had grown up with her, & Lilly loved my daughter like she was her child! I believe she had a stroke, or heart attack 1 night at home. She was very old & showed signs similar to that of my grandmother when she had a major stroke. Anyway Lilly died in just a few minutes. It was very hard on all of us. We lost her 2003 & I haven't got another dog to replace. My grandmother gave my daughter 1 of her cats. Again so sorry for your loss! About your bread: I love all your recipes! You have inspired me to bake BREAD, & NOT be AFRAID!!! Every recipe I have I tried comes out perfect every time! When I make them for family & friends they love the bread & can't believe I didn't buy it from the bakery in town! So "Thank You"!!!! I've been watching alot of Cinnamon Roll videos on YT lately, but this is the easiest one yet. It has to be fas and easy, or I won't bother. I love your overnight proofing method. I think I'll alter your recipe slightly by adding a little melted butter instead of oil when rolling out dough. Will definitely try this one! Laurie

Just saw the recipe yesterday and mixed up the dough while dinner was cooking. Made them this morning. Super easy and delious! I make his oatmeal bread all the time, that is so easy a delious to.

Made the cinnamon rolls,I only had nutmeg,it turned out fantastic,I added cream instead of milk magic,thank you again.
This recipe is a keeper. These turned out great, super soft and delicious. I ran out of milk and used plant, also tripled the cinnamon and used brown sugar instead of white due to personal preference.

May I suggest adding 1/2 teaspoon vanilla to that icing/glaze? I would use more cinnamon in the rolls too and just a sprinkle of ground cardamon.
definitely adding cardamom. I want to see if I can make this similar to the cinnamon rolls from Finland. I've tried their recipes and never quite get a decent rise
Vanilla in the icing for sure, but he nailed the right amount of sugar. Too often chefs add too much cinnamon and it becomes over powering.

I make cinnamon spiral bread with this recipe by taking the roll (without slicing) and place it in a bread pan. 350 degrees for about 40 minutes
Great amount of information in the video, and I love how you show each step and gives tips along the way. Never knew about the plastic bowl scraper technique when working with the dough...maybe with this technique I won't end up with dough stuck between my fingers hahaha. Definitely will give this recipe a try!
You may want to watch "World’s Easiest No-Knead Bread (Introducing “Hands-Free” Technique)". It demonstrates a technique call "roll to coat" that dusts the dough with flour in the bowl... no more sticky dough. Steve
artisanbreadwithstev Finished the cinnamon rolls last night. I unintentionally left the dough rising in the oven for 48 hours, but the rolls were still great. Instead of white sugar I used light brown sugar for the filling. Only somewhat negative comment so far is that they needed more cinnamon. Thanks for the recipe! It was so easy I will be making it again, probably several times within the next week =)

I have made the No-Knead rolls and Loaf breads many times and I can vouch for they turn out just like yours looks in the videos and that is an accomplishment indeed ;) I use the microwave method for my dough and bottled water and it just works so well! Pre-measuring and organized ingredients for a recipe is called: Mis en Place. That’s professional chefs terminology for Everything organized in its place. All home cooks would do better if they adopted this practice. Less chance of errors or forgetting an important ingredient. Bonus: saves precious time. Stay happy. Keep on cooking and having fun with it.
I like your videos. I haven't made bread in years but when I did it was the kneading kind so i didn't do it often. Just on special occasions. Can't wait to try your method. Sandwich bread in the store is just pure crap anymore. Won't even hold together anymore. Never occurred to me to add vanilla to the dough itself when making sweet dough . I like the idea.
