Hi Dan. I used to live in Clophill, Bedfordshire. To go out for a Thai was a bit of a treat, and very nice it was too. I now live in New Zealand, and we are swamped with Thai restaurants. However, I have found one very local to me which is pretty good. Rambling over. What I want to know is your opinion on various types of Galangal. I find it pretty hard to get fresh where I live. What do you think is the best from the following alternatives? 1) In brine. 2) Frozen. 3) Dried. Thanks Dan.
