Next time roll out the dough some and then fold, roll and fold, roll, and fold.(I do this four to five times) Don't knead biscuit dough or you'll over work it. When you cut the biscuits out go straight down with your cup and then come straight up. Don't twist the cup (or cutter) because you'll seal the edges. Your biscuits will rise higher. Also always work with super cold ingredients when making them. Stick your flour mixture with the butter back in the freezer for 15 minutes and then work with it and make sure your buttermilk is super cold too. Then you'll have soft tender biscuits and they won't be dry. Can you tell that I'm a baker? LOL

@Classic Gaming I too made this recipe. While kinda tasty, nowhere near Popeye's. His flour is off, needs corn/or potato starch in there for the crispy craggy bits. No need for the double flouring. His recipes says 2 cups club soda, but alot of his videos only show 1 can going in. Next time, I'm going to add the spices to the overnight marinade versus flour mixture.

I did this recipe in its’ entirety and although it was delicious I felt that the chicken wasn’t flavorful enough. The next timed that I did this is I seasoned the chicken w/o hot sauce n marinated chicken 4 24hrs. 3 hours prior to cooking i added hot sauce to chicken n let it marinate for 3 hrs. Better flavor

Hi Quang Tran! So when you make your fried chicken did you start on high until your chopstick bubbles then turn to medium for 5 mins? I tried doing fried chicken but the oil was too hot and did not get to the middle of the meat so i wanted some tips on how you do it :)
Temp should be about 345-350. Also cold chicken from the fridge should lower the temp, then let it build back up extending cooking time without burning.
It's better to cook chicken in a cast iron. Heat high for 10 minutes, then low before cooking the chicken and keep low temp throughout the cooking process. If cooking in a regular skillet, same thing...except I cover my chicken with a lid when you first put the chicken in (the bottom part is fried, but I didn't flip the otherside). I leave the lid on for 5 minutes, take it off and then flip the chicken...and then put the lid back on for another 5 minutes.. And then proceed to cook the last 5-10 minutes with the lid off. This keep the chicken nice and moist inside.

Temp should be about 345-350. Also cold chicken from the fridge should lower the temp, then let it build back up extending cooking time without burning.

That chicken looks bloody delicious ,I always have trouble with oil temperature it always burns. 😫😫
It's better to cook chicken in a cast iron. Heat high for 10 minutes, then low before cooking the chicken and keep low temp throughout the cooking process. If cooking in a regular skillet, same thing...except I cover my chicken with a lid when you first put the chicken in (the bottom part is fried, but I didn't flip the otherside). I leave the lid on for 5 minutes, take it off and then flip the chicken...and then put the lid back on for another 5 minutes..
And then proceed to cook the last 5-10 minutes with the lid off. This keep the chicken nice and moist inside.
