I concur. I used skinless, boneless thighs and the breading didn’t resemble Popeyes at all but I don’t care because the taste was amazing!! I omitted hot sauce and added pickle juice to the buttermilk brine and allowed it to marinate overnight. This chicken was so juicy and seasoned w/ a kick! The finished product needed no sauce! It was that moist and flavorful. Just a little mayo on a bun and pickles for garnish. It’s really better than Popeyes. I think I’ll have better luck with skin on.

Great video but I'd like to know how much and what kind of oil do you use. How long do you fry the chicken? What temperature is the oil? Somehow I missed you mentioning this. I need to find a way to do this in an hour or so. It might not be quite as good but....Any idea if an air fryer works? .I can't tell you how beautiful your chicken looks!! It has to be great! Thanks. I tried to recipe but it didn’t came out looking like that. The chicken started to get dark quickly and crust fell off while frying and the oil became very frothy. I tried using a different oil and the same thing happened. I’m thinking maybe it’s the baking soda. However the taste was amazing. Any suggestions because I really liked the taste.
I played round with this. I mixed the egg in the flour for coating and made it into a batter for coating. That way it doesn't get weird and too thick that it falls off. If you make into a batter you get the crunch look without it falling off.

Crust turned black nearly immediately. Worried it was the sugar. Also my oil drifted up to 390F. Don't want to remove sugar, so thinking next try I'll start with 325F oil. Any other suggestions?
@@BrownGirlsKitchen Second try last night was at 300F or less, though we had difficulty keeping it up to that temperature and it often dove down to 200F or less. Not black this time but still darker than regular Popeyes or your chicken in the video. I inherited a deep fryer from my Mom, which I've never tried. Will try that next time. This is also the first time I or my wife have tried deep frying chicken. Our experience had been limited to fried fish.

Sounds like your oil is not hot enough
Get a cooking thermometer it really helps

Your chicken has to be 165 internal temperature. That takes on medium heat depending on what cut you are using 7-10 min

Your oil was wayy to hot. Sugar isn’t the problem. So plz cook at least lower than 350
