Edamame Filling
- 200g shelled Edamame
- 50g Sugar
- 5g salt
- 100ml Water
Pastry Cream
- 340g Whole Milk
- 50g Sugar
- 2g salt
- 2g Vanilla Extract
- 18g corn starch
- 8g AP Flour
- 2 egg Yolks
- 25g Unsalted Butter
Mochi
- 225g Mochiko
- 450ml Water
- 100g Sugar

CHEFPK if you are still interested in food anime I suggest the one called Isekai izakaya nobu. I think it leans towards Japanese cuisine and also has a small segment at the end of each episode that explains the dishes presented during each episode. It has kinda of a cute slice and life story aspect to it too. Keep on cooking :D

Zunda is Sendai's famous regional flavor, so you see a lot of zunda mochi and other sweets in Sendai Station and anywhere one might find themselves doing the tourist thing around Sendai (hence the joke that Gojou's off sightseeing while Fushiguro was busy trying not to die). Kikufuku is a brand whose shtick is zunda (and regular red bean paste) filled daifuku with a cream center, but it's written as 生クリーム (nama cream) so it's not so much pastry cream and more like whipped cream. Kikufuku's advertisement copy says something along the lines of "elegantly sweet and addictively soft, once you taste this cool sweet cream daifuku you'll never forget its deliciousness." Judging from all the pictures it's probably something like they pipe a small disk of their whipped cream, freeze it, and form the zunda or red bean filling around it before wrapping in mochi. (They also do varying flavors of their cream filling, since it looks like one of their other famous combinations is red bean + matcha-flavored cream center.)
You did make that pastry cream look really easy though, so props where they're due!

The first time I saw Gojou was about 4 months ago, needless to say, it was love at first sight.
Bruh, my sister was talking about this manga/anime for a few months. Did I ever listen? Nah. But for christmas I got her the entire current manga collection which was 6 of them at the time. Then I watched one episode with my cousin and boom....I'm trapped 😂

I am studying in Sendai, Japan right now. Zunda (edamame paste) became my favorite flavor. So, thank you so much for this recipe.
This zunda mochi/zunda daifuku is my go to souvenir when I went back to my home country.
P.S. they usually use whipped cream instead of pastry cream for zunda mochi
I really, really wish I had the chance to try it when I was there. I probably did... But I may have been drunk.
Zunda is a regional delicacy specific to Tohoku area, especially Sendai. It was hard finding one in Tokyo. I did found zunda shake (zunda flavored milk shake) in the international airport, but I didn't find zunda mochi there. You must try it when you come back to Japan lol

my personal favorite is ichigo daifuku mochi. i've made it before and its so good. its basically a fresh strawberry, wrapped in azuki beans, and then wrapped in mochi.

When I was with a tour group in Japan, our guide told us that many of the cute looking souvenirs snacks were mostly flour wrapped bean and bean wrapped flour. They only *looks different* but taste the same. But this kikufuku seems different from the typical red bean stuffings that's in standard mochi.

I knew CHEFPK would be a boss and watch Jujutsu Kaisen, it's only gonna get better from here (I read the manga lol, was 'only' 130 chapters so far so not THAT long. Haven't straight up read a manga to current like that in a while)
