Thank you for your video. For those who are unaware, Chinese Bread Stick (油 条 怪) which in Cantonese "Youtiao Gwai" means Oil Fried Devils originated from medieval China as protest against the Song Dynasty corrupt politician Qin Hui (秦 檜) who with his villainous wife Wang Shi (王 氏 ) treacherously plotted the wrongful execution of the hero Yue Fei (岳 飛). Therefore Qin Hui and his wife Wang Shi are represented as the two halves of Youtiao Gwai and eaten in mockery against the two despised traitors.

This is truly a good recipe. The taste and texture were perfect, in my opinion. I read in one of the comments that they left it for two hours and it was fine, so I did the same thing. It was so good that I doubled the recipe in a second batch and I am putting it in the fridge overnight so I can make it as part of my dinner tomorrow.
My only suggestion to whoever tries this is to make sure you put water in between the pieces you pinch together. Some of mine came apart while frying. I also think I rolled it out and cut it too thin for stretching prior to frying because it was long and skinny. I am going to roll it out to about 3/4 inch thickness and cut it about an inch wide and not stretch it out too much before I fry it. Trial and error on my part, but the recipe itself is great! Enjoy!

Hi Gao, I made this recipe. I did it with water though. I was skeptical because of the kind of leavening used , but it really surprised me when the size tripled in the frying pan and all of the holes formed inside. This time we couldn’t wait to see if it would work and we gave only 2 hours of rest for the dough, and we had a amazing results, taste was perfect too. Next time we will leave overnight and see, if might turn out even better. Thank you 🙏

You didn't cook it long enough. That's also a common problem in making honey comb candy. If you want to be super extra, you could sift the dry ingredients though a fine sieve then mixing with a wisk before adding the wet ingredients. Remember to check the temperature of the oil too.

I don't know how your dough was, but I only kneaded in it until it was combined before rolling it out. If you over knead, you are making it tougher and kneading the air pockets out. After I oiled it, I cover it with a cloth and let it rest for two hours. I noticed the dough felt like it rised a bit (airier) and it was still moist.
