Ho. Ly. Cow! My husband made this for me as my "Christmastime special food," and I am in shock. It's a legit gyro with legit cucumber sauce! IT'S SO GOOD! With most AIP food, I end up thinking, "meh. It's close enough," or it triggers my gag reflex because it's god awful. This is amazing. Seriously. Amazing! Tomorrow, he's making your orange chocolate truffles, too. I was sad, because I wasn't allowed to celebrate ANY holidays as a kid, thanks to my nutty Jehovah's Witness parents, and now, thanks to MS, I couldn't eat my favorite Christmas junk food. I am no longer sad. I have gyros that taste exactly like the gyros that would "kill" me, BUT THEY WON'T KILL ME! You have no idea how happy you have made this food-driven fatty! Happy holidays!
I finally made it! GAME CHANGER! Absolutely delicious! I added garlic and rosemary to the “naan” and it came out perfectly. Even if I didn’t have the naan, putting it in a lettuce wrap would be just as good
Ate this yesterday and today after bookmarking this recipe for some time, and I can attest that they are so satisfying! I made the tzatziki sauce with AIP vegan mayo as a base (basically it used coconut butter instead of cream) and then eyeballed all the other ingredients, (subbed ACV for lemon, left out onion & garlic powder [lupus, low fodmap]), and added shredded Persian cucumber - SO GOOD! It tasted so tangy & yogurt-y, it was unbelievable! The extra meat we've been adding to salad and spaghetti squash with no-mato sauce. It's been a pretty good food week 🤗

So fantastic! Just finished eating and had to come tell you right away how much we enjoyed it! I’d been waiting to try it since you posted this video and it’s worth it. Had to create a substitute for the tzatziki from creamed cauliflower because of my allergy to all things tropical but it was an acceptable sub (will probably add some avocado to get a more creamy flavor next time). You know you’re living AIP when you don’t just have to make different food choices but also have to make the actual ingredients to make a meal! lol 😂
Michele Spring, you know what they say..."necessity is the mother of invention" (or at least problem solving) lol. Though I’d much rather be able to tolerate coconut so I could have ready made creams and flours etc.

Michele Spring have you heard of the book and blog NoCrumbs? It is a Whole30 endorsed book...the author (her name escapes me) has this simple little recipe for what she calls “counter onions”. Simple marinated red onions that she leaves in the counter, hence the name. So yummy with so many things. I feel like they would go great with this.
Hi Michele, I made the flat bread, is it possible that the coconutmilk I used was to 'rich" ? The wrap was very nice mmmm , but felt greasy en looked more like a crep then a flatbread. I used 80 % coconut % 20 % water. Perhaps it would be better if I dilute the coconutmilk and make a double batch?

Yes, but it did take a while the first time I did it to fully clear everything up (like 3 months, and then it took 9 months to fully reintroduce everything to Paleo), and I did have SIBO as well and had to do an antimicrobial from my functional medicine practitioner to get rid of that. I did it again last spring to clear up a huge flare I had after going off of Paleo for a while and it took 6 weeks for all of my symptoms to subside.
That’s awesome I’m glad your feeling better :) I also have sibo, hpylori, yeast and other gut infections, I’m taking herbs and seeing a functional doctor. It’s week 5 and I’m starting to feel like myself again! Seriously has helped a lot even tho it can be very difficult at times.

the only cassava flour I can get here in the UK is much coarser and yellowy I can see the fibers ; what is your flour called? or how would I adjust the recipe to use my flour it seems to soak up all the liquid
Hey Hannah - So no, coconut concentrate is typically the same thing as coconut butter - a mostly solid, hard mixture. Coconut cream is the really thick part of coconut milk - if you've ever put a can of coconut milk in the fridge overnight you might notice that it separates into a solid part at the top and the water. The solid part is the cream. You can just use this (if it separates for you, sometimes it doesn't, which is a pain!!) or you can find hopefully find cans of just the cream. Unfortunately I'm not sure of any UK sources or else I'd tell you of one!
This looks amazing! I love lamb, but my husband doesn’t. I know it will change the flavor, but can I replace the lamb with something else? Also can you taste the lamb on this dish?
Eh, you can kind of taste it, but it's not very "lamby" as I don't really like lamb much either and I love this. However, you can replace the lamb with more ground beef if you'd rather.
hmm, I'm assuming you're referring to the coconut cream for the Tzatziki sauce - and still AIP-compliant? My suggestion isn't ideal as it takes a while (not a lot of work, just some planning ahead), but it would be to make tigernut milk and then make the "coconut parfaits" from my post here: thrivingonpaleo.com/aip-breakfast-pumpkin-pie-coconut-parfait/ but replace the coconut milk with the tigernut milk and ONLY use 1 tsp of gelatin - and none of the other spices or add-ins I mention in that particular recipe. Just the tigernut milk and a teaspoon of gelatin. That'll give you a "yogurt"-like consistency that you can then use for the sauce. As for the wrap bread, just use tigernut milk instead of coconut milk in those. I know it's not ideal - there really aren't a ton of substitutions for coconut milk products on AIP unfortunately.
You can definitely do just beef. I've traditionally had lamb gyros so I wanted to make them with lamb, but I'm also not a big lamb fan so that's why I mixed in the beef. But if you don't like or want lamb you can definitely just use beef!
Huh, I've never heard of it NOT being compliant! I've always told people to include it and have never heard of anyone having issues with it, but I mean, like with everything, if you experience any sort of symptoms with eating it, don't include it... But I think it's fair game

Oh you definitely could - I just give cream as the baseline because most people don't want to take the time to make coconut yogurt and most store-bought coconut yogurts aren't AIP-compliant, so it's just an easier option to have on hand. But if you have some AIP-compliant yogurt definitely use it!

Does the sauce taste really coconutty?
I don't think it does - there's enough other stuff to take away the coconutty taste.
I would imagine you would use coconut yogurt for the sauce like the original tzatziki. Yogurt has that tang and the cream is plain.
