    Looks so good... and I couldn't help but to notice that one of the tomatoes had a blackened face on it and it looks scared going into the blender LOL

    We canned small green tomatoes as if they were dill pickles. They wrinkled up and looked like brains in a jar and the kids loved taking them to potlucks and telling people they were pickled brains. They were delicious

    This looks so delicious and beautiful. I love Salsa Verde. No one else in my family does, unfortunately. Canning looks labor intensive but the results are awe inspiring. I love watching you cook and can in your kitchen. Take care.

    So good on enchiladas,burritos or for dipping corn chips. Would be good on your beefalodas !

    Use them in place of cucumbers in your dill pickle recipe. Cut in wedges. So good.

    Just an FYI. I make jam with my green tomatoes (faux strawberry, raspberry & cherry). Super easy recipe I found on line. It uses sugar & jello so possibilities are endless!

    Have you made homemade tomato soup? I did this year for the first time it was so good. I used red and green tomatoes from our garden with onions and garlic. I roasted them in the oven then blended them up and added some chicken broth and a half gallon of raw milk. I didn't measure just went with it. Oh ya don't forget the seasoning

      Yes! I made tomato soup this year, too, and canned a good amount. It is so good with a nice thick grilled cheese.

    Hi Miss Jennifer.... I made salsa verde for the first time this year as well (using green tomatoes because, well, I just had that many). It turned out completely delicious. We don't care for cilantro (fresh especially), but I wanted that hint of flavor... so I opted for dried cilantro. I did ours on the stovetop... but have also seen ideas for the roasted. It is delicious no matter how you slice it. New adventures are fun aren't they?? Hugs, Penny Sue

    On another topic, I just had to let you know that I went on the Portesi website praying that they sold their pizza in some store near me but no. The good news is that I really trust your judgement and I was able to order their Pizza Seasoning and ordered a. Couple bottles with. very reasonable shipping. They came and the bottles are BIG. Thank you Jennifer! I opened one, took a big sniff and was transported to a fabulous pizza parlor so again, watching your every video I am learning so much about cooking, methods and yes, I have both cookbooks now. #2 book is just as wonderful. I am admitting that in my 60's I'm still learning about cooking from you. Bless you!

      Ooh I love the Portesi seasoning. It's really good in any pizza hotdishes and really helps the cheapest frozen pizzas get a hand up.

    I make green tomato salsa Verdi as well. Delicious! I also use my green tomatoes to can green tomato mince meat. Having a large family like you do, enchilada Verdi would be a great quick meal. I shred chicken, add some sour cream and shredded Jack cheese to make a filling. Dip a tortilla in your Verdi sauce then add some filling and roll up. Place in baking pan seam side down. Pour additional Verdi on top(like lasagna) and cover with foil. Bake 1/2 hour 350’. Take foil off add Jack cheeses to the top and bake an additional 10 or 15 minutes. My husband doesn’t like Mexican food. He loves this.

    See the ones that are just starting to turn pink? They’re the perfect ones for fried green tomatoes. Slice thick and dredge in flour, salt and pepper. Fry in leftover bacon grease. When brown to your liking, drain on paper towel or brown bags as my mother did. Remove most of the remaining bacon grease. Sprinkle in any remaining seasoned flour to make a roux. Use the roux to make a milk gravy. Put a slice of hearty white bread on a plate. Add 2 or three slices of tomato and some gravy. If the flour in the pan is brown, so much the better. So good. Any bits of tomatoes left from slicing can be fried and added to the gravy.

    Here's a quick and delicious recipe: pour over boneless, skinless chicken in crockpot. Cook on high for 4 hours. Chicken will shred for tacos, burritos, etc. Same method is wonderful on pork roast. Also, great on scrambled eggs.

    I make Salsa Verde every year, with tomatillo's, and do the roasted recipe every time. Roasting it is a game changer for flavor. If you make it again next year, maybe try adding some Cumin and Cilantro while it's simmering. It kicks the flavor up a notch.

      BTW...I despise Cilantro, it's a gene thing, but if I chop it fine or blend it in, then I don't notice it at all. Normally I pick it out of salsa.

    I do this recipe but I put the green tomatoes, onions, garlic and jalapenos under the broiler to brown them
    I got my recipe from the Ball canning book for green tomato salsa Verde

      Irasema, either wash them now and lay them out on a towel to dry, then freeze. Or freeze them now and then remember to rinse them when you want to use them.

    Very nice vid!...I see more jars of this recipe in your future...they're pretty enough for Christmas presents...that 50 lbs of green tomatoes will get used up very quickly!

    I made a similar version but didn't roast the green tomatoes. I bet that added a great flavor to it. We love this type of Salsa Verde. I'll definitely make it again. I may try roasting them next time!

    50 pounds of green tomatoes, oh my word, but you are putting some to good use, good choice to swap them out, Ball has a recipe for using the green, but they don't roast them. I do a pizza sauce, canned, roasted red peppers, tomatoes, onions and garlic, roast all on the grill, it is so good and I know it wouldn't taste half as good if it was not roasted, and every vegetable came out of my garden this year. I'm guessing you still have a lot more tomatoes to go.
