  • 今次就好高興去到全日雞實驗所拍攝,老闆Gary好多嘢都係親力親為,從零去做起呢個海南雞,佢哋所用嘅食材,醬汁,好多嘢都係自己做,為咗就係保持一個好嘅味道比大家! 大部份我哋出去食嘅海南雞,啲飯都係軟腍腍,而佢哋嘅飯就係蒸出來,加埋自家製嘅雞油,配上靚嘅米去煮出嚟, 一食就知道係好嘢! 我拍攝嘅時候,大部份食客都係清乾淨所有嘢食,所以好唔好食,睇吓啲客人就知道!

    其實海南雞唔難整,煲好水熄火放隻雞落去浸大約一個鐘,時間每個人的設備都唔同,所以你要自己試,浸完雞的水用黎煲飯,點樣可以好食d要你自己去研究每樣野點樣做得更好。

    好野。。我未食過但係呢一個投資方係啱㗎。。機器成本研發需要多錢呀。生產都需要一筆錢。但係如果上軌道呢佢一件可以控制到成本。唔需要人手去做嘅方案。早餐廳最怕廚房玩嘢

      佢套流程可以做到海南雞中央工場化,工場做哂浸雞拆骨浸湯包裝,只要解決到冷藏運輸再浸翻暖,佢就可以發過豬頭

    Looks very delicious and the way he cooks the chicken very well thought out. The funny thing is that I see so much of myself in him. I’m trained as a fashion designer and worked in Paris for over 15 years. And also an interior designer too. Also growing up in the family restaurant business and having my own restaurant and bar in Canada. I use to have my private kitchen in hk when I had time to do it. And gave me lots of joy. Hopefully one day I can open back up a rest again too.
    But for sure I do need to return to hk n try my all time favourite comfort food. Chicken rice at “All day chicken lab”

      斬料飯做到平 系因為人力成本低於其他餐飲,因為一次過燒同浸就做到一批成品,出餐只需有人斬同打包,遮系一檔兩個人就夠,而做專做海南雞 價錢可以做更高 仲唔洗搞其他野😂整部機去廚師化系正常,佢個做法分別在於出面一早浸一批賣到收工,佢咁樣小量浸可以員工最大利用化一路浸一路出貨做足全日

      無必要神化呢間野,呢幾年唔同地區食左起碼都20間海南雞,對比之下完全唔覺得優勝之處係邊,又唔係特別滑,個醬又唔出色,之前同朋友突登走去食,個個講到好滑,只有失望

      Aiya... even if he drops 2 to 3 or 4 drops of blended peanut oil or pastes, mean he can transform the dish lah. Or throw in some fresh spring onions into that ginger mix. How much is 5 bunch of spring onions going to cost ? But to the diner, this transform their appetite.... 60 dollar is so reasonable. Even if McDonald, it is around 100 dollars already ! lol....

    這個老闆講得誇張, $60一個套餐同大家樂冇分別,雞只得五件飯又少,若是男士一定不會飽,影出來同實際去買分別很大,他的質素同一般快餐店沒有分別,而且賺得很深

    好事情来着,说不好的,说不如厨师的,那人工谁来出,制式降低成本,约等于一种有品质的预制菜,根本没分别,以后加上ai都可以,只是人的味觉很不同,但是,好吃的适合大部分吃的,才会赚钱,不然做慈善啊?又不是实际传承😂

    我又唔覺得佢係想留低, 你聽返佢講 2021已經過咗馬拉, 大概係申請咗MM2H, 自己設計生意留喺香港, 個人要港馬 2邊走, 但馬拉封城焗住返香港, 所以覺得要搵檔生意喺馬拉搞, 奈何設計生意唔吃香, 唯有試轉跑道入行門檻低既餐飲業, 結果佢成功, 仲留喺香港都係為咗搵錢啫, 大把人都係咁, 唔使諗咁多無謂猜想

    It's very strange... that, when you're busy in that place... that your neighbours doesn't like it.... So.... Should've talked to them, and even if you sold a limited amount, why is this an issue? Should've made an actual statement instead. About opening another branch, but you are also bringing in traffic to that place, so that is a good thing ! ....
    The creative thing would've been, to stayed in that location.... and then take that customers' details... and do a second batch but you deliver it to them instead etc. (And also, throw in items, from your neighbour's stores. Also cross sell items, from the same place. Small but reasonable or as complimentaries etc. ) Considering you stated that you're paying for stores' operational costs anyway, and they do too... So you're not asking for more, if you upsold. When you use an app, you can indeed structure it such that, you sell via two stores... Two different stores, but you need a customised app. That's whereby you need to find the right company to make that. Or to get that shopping mall to host it, and then split back the costs to the store's owners or whatever etc.

      As you can see, it is around 8 wor... And each one, you could say, around 6 portions. That is 48 in one go wor.... 20 min producing 48. Then another 20 min for another 48.... Around 100 under a single rush hour for lunch, is reasonable enough. And if he split the machine to have two sets of broths. He could do poached plane chicken. Or even "poached duck" with plum sauce....(and vinegar)..... Or even "poached salmon".... Lots of ideas. Whatever is reasonably priced.
      Ai... he should place himself in a location good for tourists.. lol..... And make sure the cooking time is around 10 minutes to poach. Then... wah.. a lot of stress removed from the city.

    睇到條片第一反應就係禁入黎COMMENT
    呢間野D雞好撚細份,係細到過份,連女仔都食唔飽
    收得唔平出餐又慢,亦無特別好食
    唔會再有第2次 (旺角店)

      @@MadPCsuperb 根本老闆就唔識整海南雞,首先味道已經麻麻哋,第二點雞肉太嚡。同埋你會食到成嚿啫喱喺肉同雞皮中間(雞油)

      大咩集團要做,一個月搞掂。集團做咗,佢間店就收皮。長沙灣都有幾間買海南雞。嚟啲產品,好易copy 。除非隻雞產品,質素好特出。

    好成功,可惜如要做大市場,資金投資大,設廠房,拎HACCP ,牌照,鋪租仍貴再加運輸,儲存及人手。產品單一,難長久戰。

    班人見到話係機器製作, 就已經好感動。 但食物既質素係點? 做左部機, 一日可以賣200隻海南雞以上? 定係400隻? 先前有人推介慢煮, 現在就開始推介程式化。 其實, 開一間店, 每日真係賣到幾多隻雞? 其次, 要靠網上做這類推廣宣傳, 去搏取人氣, 就明白到。。 好快就會被食厭。 就好似雲吞麵若以機器制作會點? 我個人極喜歡懷舊既雲吞麵, 但很多年已經食唔返早年既出品。 有時候去食KenTurkey 現在轉稱為KFC, 發現炸出來既雞, 都係好乾無肉汁。
    我亦都響星架坡當地食過海南雞飯, 但相比起, 當年尖沙咀亞士利道既南亞餐廳出品既海南雞飯, 還是比較喜歡後者。

      馬來西亞又可以用呢啲機器去浸雞?咁即係話外國嗰邊都可以實行呢類形式去做生意架啦,即係話呢個實驗室老細,個意思根本就係想留低,並唔係想移民走?同埋外國搵食艱難?原因多左人移民?所以佢又驚自己冇生意可做?咁點解佢又要開埋馬來西亞嗰邊間分店呢?所以我覺得佢係非常好矛盾,同埋好戇鳩,因為根本就唔知佢想講緊啲乜野,係叫做9唔搭8,況且加上事實係冇未來及將來,將會都係會冇保障,何來會有發展呢?每個人民冇啖好食,冇左發展,當然個個都會選擇走,所以話不如你用吓個腦先至留言啦😂😂😂你仲以為自己講到好啱咁樣,你記得到陣時你都唔好移民走呀,記得以後留係大6嗰邊就OK架啦,你知唔知道呀😂😂😂😂????
