Quick & Easy: Vegetable Orzo Soup

  • Vegetable Orzo Soup
    This is a light soup that is super easy to make and wonderful comfort food. Lemon is one of my favourite add-ins to elevate a soup. The combination of lemon and thyme is so perfect!
    Ingredients:
    2 tbsp, vegetable oil
    1 medium onion (approx. ¾ cup)
    1 stalk of celery, chopped small
    1 carrot (approx. ½ cup), chop small
    2 garlic cloves, smashed
    ⅓ cup orzo
    4 cups vegetable broth
    1-2 tbsp thyme
    2 tbsp fresh lemon juice
    Salt to taste
    Optional: ½ cup chopped seitan or vegan chick’n,or 1 cup chickpeas
    Instructions:
    Heat oil in a medium sized pot.
    Add onion, celery, carrot, and garlic. Saute on medium heat for 3-5 min or until the onions are translucent.
    Add orzo, stirring constantly until orzo is lightly browned.
    Add vegetable broth and stir. Cover pot and cook for 8-10 min.
    Optional: Add seitan/vegan chick’n or chickpeas and stir. Cook for 2 minutes.
    Add thyme & lemon juice & stir.
    Salt to taste if necessary and serve.
    For a different flavour profile: instead of thyme, use oregano.
    Enjoy!
