It may actually have influenced us. I know that the region where I live in Mexico has received a lot of polonians, Romanian, etc. for centuries and that an hour or so from my city a lot of french established a couple of centuries back.😊
I have read that South Texans sometimes add milk to the carnitas and cook it down at the end to get some crispy caramelization from the milk solids. Never spent time down there but the supposedly South Texan recipe I used was unreal good!
Take your pick. Almost the whole animal is used in carnitas.....also add a big sip of soda for caramelization (not so secret ingredient), preferably Coke or orange soda
Start with just the core of the recipe. Cook pork shoulder in fat on low heat until tender, then brown the pork under the broiler. Serve with whatever carb you got. That's the essence of this dish.
Basically you should get lard but oil can do (but it won’t taste as good till you reuse it a few times). Then get pork butt (pork shoulder will work, but it won’t fall apart as well and can have excess fat that needs to be removed sometimes) and cube it into a similar size as seen here, about 2-3 inch cubes. Get an orange or two and quarter or half them and juice them and add them in, a single cassia cinnamon stick (Mexican cinnamon sticks), onions quartered or tough chopped and add that in the same dish as the pork and lard. Add in some bay leaves. I’d recommend seasoning the pork generously with salt and nothing else. Bring the meat to a pretty fast simmer on the stovetop then put in the oven at 300 for at least 3 hours. At this point it will be cooked but check for tenderness. If it’s easy to shred then pull it. Shred it with two forks (or however you like I guess) and turn the broiler on and put it in for a minute or two in a baking sheet. Stir it at least once and put it back. Keep doing this till it’s crisped up to your liking but don’t let it dry out. Traditionally, carnitas (as with a lot of Mexican cooking) don’t have much seasoning because the salsa and toppings is where the flavor comes from. The meats job is to be very “porky”, savory and rich. This recipe is like a middle ground because you will probably have to use store bought hydrogenated lard and obviously you want have a traditional flavor till you reuse it a few times. If you end up making this often then you can add in less and less ingredients as you keep reusing the lard. Make sure to strain the meat when you fish it out because it will be greasy enough. You can add some other organ meat or pork belly or some other cuts of meat too as traditional carnitas was basically the entire pig but even in California we don’t do that often (mainly Al Pastor will be a whole animal) or Sunday meals.
That "JESUS" at the end👌🤣🤣 my kids and I are laughin you talk straight whiteboy but ur heart is brown af for sure❤😂😂 you invited to all the sunday bbqs❤😂😂
Carnitas go better with corn tortillas rather than flour, and red chile de arbol salsa instead of serrano. Also you’re missing the sweet on the cazo, you can use orange juice (a lot more than those slices) or a coca cola.
Is that what your ancestors used? Coca Cola? No offense, but Coca Cola is not exactly a natural, a traditional or a good quality ingredient. Imagine how much hate ge would get if he showed Coca Cola in a carnitas video 😂
@@AlissaSss23 Considering how many comments have specifically mentioned using Coca-Cola, he'd probably be fine. The recipe is on his website if you want the full thing
@@bigjuan2001those get more views, it makes sense

Love this song. Haven't heard since I watched 'Paulie'.
Yes this please I want some. I'm growing purple tomatillos this year so I'm making purple salsa for it.
Wow ❤
F*cking beautiful.
the hand in the mixer brought back my intuisive thoughts that I fought so hard a couple of years ago💀 why😭
That's how we Cook pork in a Romania for keeping over the winter. Have done for centuries. Except for the lime, people didnt have limes. Yum ❤❤❤
It may actually have influenced us. I know that the region where I live in Mexico has received a lot of polonians, Romanian, etc. for centuries and that an hour or so from my city a lot of french established a couple of centuries back.😊
Couldn’t even edge to this, exploded immediately
Its okay to not share things you know
I have read that South Texans sometimes add milk to the carnitas and cook it down at the end to get some crispy caramelization from the milk solids. Never spent time down there but the supposedly South Texan recipe I used was unreal good!
Bro just said ,,pork" like bruh just tell me the cut
It's cut up pork shoulder (butt)
Jesus zoomer speak is just intolerable
@@_MrTrue im so sorry einstein for wanting to know something smart ass🤡🤡
@@orbit720 yeah could be.
Take your pick. Almost the whole animal is used in carnitas.....also add a big sip of soda for caramelization (not so secret ingredient), preferably Coke or orange soda
I always felt that every mexican food without avocado is a crime 😂😂😂
Thank you! Your cooking skills just Got you a new subscriber!😡😋
I wish some those recipes were easier to follow. They all look amazing, but it's so much work that I never want to bother.
Stfu and just cook it or make some one pot crap. This is literally an incredibly simple recipe
This one I quite basic if you BUY the tortillas instead of making it
@@Aaron-McDonaldThank you for taking the time to share your knowledge with others here. 😊❤
As a mexican & a texan this recipe was really good. If you can handle spice i recommend using Serranos or a mixure of jalapeños and serranos.
Mexican in here!! You should use oranges instead lime and try corn tortilla next time ;)
as a taco munching border hopper i can confirm i'd munch on these tacos
Out of pocket 😂
That "JESUS" at the end👌🤣🤣 my kids and I are laughin you talk straight whiteboy but ur heart is brown af for sure❤😂😂 you invited to all the sunday bbqs❤😂😂
This song is so nostagic latina music is diferent than normal nostalgia
Looks great!! Try using a clay pot and add orange juice and coca cola, thank me later.
You only need to do this if you aren’t using lard and aren’t doing a confit.
NO soda!!
Also, recipes, like everything else, evolve with time and modern cultures changing them to their tastes is normal. I'm not exactly the arbiter of what is or isn't authentic/quality Mexican food, but neither are you so
Wish he has posted the recipe because my god, that looks fantastic!
Carnitas on flour? Get out of here... I love your videos but this is so Tex-mex I hate it.
He lives in Texas, sooo...
For real, who in their right mind eats carnitas with flour tortillas
This is corn country
tssss!!! Hay Papá!! Usted sí le sabe a las carnitas. (some peeps here in México, pour a bottle of cocacola in the meat during slow cook, so meat would be crispier and accentuate the flavour and color)
As a Mexican.....I applaud your recipe
Thats how yall make a taco. Coming from taco city.
Saint Anthony, Texas 💪
this short has shown up on my timeline at least 4 times now.....the hand in the blender makes me gasp everytime XD
I love this guys charm!! Food looks amazing!
Is the editing a homage to Robert Rodriguez' Puerco Pibil video? Love it.
Props for the music ha ha ha one of the first songs i learned on guitar
I get the feeling Josh loves to show off how sharp his knives are. 😀
As mexican, I can put a note of 9.5 out of 10 because of the method you use to make the tortillas, besides that, the dish its amazing
As a Mexican I'll gave you 8/10
They look great Boom!
As a Mexican I approve this, 10/10 authentic, colorfull, healthy and tasty.👌
I just ate some chicken wings. Now you got me hungry again. I know those tacos are out of this world in flavor!
All that with Antonio Banderas killing it in the background
I'm in love 🤤💞 Been craving real tacos for so long. Everyone here does the hamburger version. Which is awsome too but not the same 😪
Your hand in tha Licuadora was freaky man, like "holyshit"!
I wish I had the confidence to do a channel like Josh, I've always loved his videos, and as a Chef, it make sense to DO these kinds of videos, but I just don't have the confidence.
P.S Another yummy video bro. This looks wonderful!
Guatemalan and mexican guys used to bring a stack of carnitas and tortillas to my dad's work and when I'd go pick him up we'd all feast.
