I made this a few weeks ago. Have you ever thought that recipe's are more like guidelines? I added white chocolate coin like disks. powdered espresso, and chopped walnuts. Very delicious!
Dennis, Last night I made the biscotti, delicious, I used the mixer, I have a large (not commercial) Kitchen Aid, I used a flat blade to mix sugar, eggs, etc, than I switched to a dough hook when I added the dry ingredients, I used vanilla extract and skipped almonds(allergies to nuts), the mixer worked great. Hi Luci. Biscotti dough is very stiff. My mixer might handle it, but I'd be afraid of burning out the motor. Maybe if I had an industrial mixer. I think it's safer to knead it by hand. Unlike bread dough, which takes a while, biscotti dough doesn't need to be kneaded long-just until blended. I hope this helps.-Dennis
Happy 3rd anniversary! Still love watching your videos and LOVE, LOVE, LOVE biscotti. will definitely give this one a whirl. I do have to tweak recipes to lower the sugar since I do not handle sugar well with my blood sugar. YUM on biscotti though! Still watching over here in Holland. Keep it up and here is to many more years and videos! I think you should compete on that show "Americas best baker" next year!
I like this cause it does not have chocolate chips or frosting. Any hints for adding walnuts or almonds, as with them your recipe comes close to my locally made stuff?? But at $10/lb I will make my own. Thanks!
Hi Susan. Thanks for the comments here and on my channel. I think you also requested a sloppy joes recipe on my Facebook fan page. I researched those and every recipe used ketchup. Ugh. There has to be a better way. I'll keep the sugar issue in mind for future recipes, maybe I can suggest alternatives to granulated sugar when baking. Thanks again.-Dennis
You really caught my attention! LOL! I immediately played the video on my computer, listening carefully, even wearing headphones so as not to miss anything. It's okay. I didn't use a Gordon Ramsay expletive (which I also use when things go wrong, but not when I'm doing a video). At four minutes I said, "That worked fine" and I chuckled as I said "fine." It could be mistaken for an expletive, but I'm innocent. Thanks for waking me up.-Dennis
Nice recipe / instruction I heard a 'gordon ramsay'-type word at four minutes. Maybe edit it. On the other hand, maybe leave it in there. A nice surprise double-take! I use it often, when annoyed. But not in the kitchen! Har! Happy birthday!

Could you use all egg whites for a biscotti? As i am on low fat diet want cut some fat if possible
