that's exactly why I was searching videos, I've seen both, but no one describes why they do their method versus the other 🤷♂🤷♂ The other style smokers with a single hole, do have a wire mesh to keep the chips from falling in the drink. That is the reason i would expect to put the chips in the screen to better protect from wood chips in the drink
I think he's doing it that way because he gets more smoke into the glass per pinch of chips. The tradeoff is ashes in your drink, but if you're careful, it should work. I'm guessing he's a bartender at Atlanta Grill Co, so he's probably tried all kinds of methods and settled on this. And why the screen on top, you ask? I'm guessing it helps diffuse the flames so you don't scorch your foghat.
I don't care what you say. Logic dictates one puts the chips in the screen. It's the only reason it is there. It will make the burned chips easily removable.
