Hi Rachel, I have made this enchilada sauce several times now. It is the best! I have kept it in the refrigerator overnight to let the flavors marry. Then I freeze it. It works just beautifully and I must say, it is nice having it already made up when you want to make a huge Mexican dinner. I thaw it overnight in the refrigerator and just heat it up to dip my enchiladas. It is just a fabulous sauce. There is nothing better. Thank you so much for this recipe. ❤

I made this enchilada sauce to go with my beef burritos yesterday and it was the BEST enchilada sauce I have ever tasted!!!!! I followed your recipe except I didn't have Mexican oregano - just regular and it was delicious! My husband actually got seconds and he never gets seconds - that's how good it was. So the best enchilada sauce I've ever had in my life was Casa Guadalajara in Old Town San Diego. The Mexican Restaurants in that area do things right and amazing. Then I tried this recipe. This one is just as good, if not, better than the restaurants in Old Town San Diego. With some minor adjustments to the roux and different steps (like cooking the flour for several seconds to roast it more before adding the oil), i think I can make it better than any restaurant. Thank you!

@@pattwhitmore8365 Needs to be cooked longer. Add a cup of water and let it simmer for at least thirty minutes on low until it thickens. Don’t over use the bullion, could sour the sauce.
I have made enchiladas twice now and they were both amazing. One with chicken broth, chicken bullion, and shredded chicken enchiladas. The other with beef broth, beef bullion, and ground beef enchiladas. The sauce is even amazing on a tortilla chip

There is nothing like the flavor of homemade enchilada sauce. My favorite way to eat it is in a bowl with refied beans and plenty of cheese over the top. Sometimes I add taco meat on the top of my beans! Delicious! Gosh I’m hungry for it right now! Thanks Rachel! I’m trying your recipe next time I make enchilada sauce.

You saved me! Bought the can sauce..poured it in the skillet so I could run the tortillas through it before I rolled them..thought I would save time if I put 3 or 4 in at a time...WHAT A MISTAKE! The tortillas soaked up all the sauce and fell apart. A thousand Thank yous!!❤

I once used "chipotle chili powder"(🤢...I didn't care for it therefore I was disappointed as I desire traditional Mexican flavors) and I sincerely recommend using a chili powder you are familiar with the first time you make this ☝🏻Follow the instructions/directions Rachel gives you...from the ingredients such as Mexican Oregano and NOT Italian oregano to the way she layers the ingredients in stages because you are essentially building the sauce and it comes out perfectly😊👍🏻

I made this again, substituting white onions, garlic and unsalted chicken stock. Doubled the recipe because it went over so good. This is hands down the best red enchilada sauce I've ever had and I've traveled a lot. Anyone thinking about trying this just do it. Your favorite Mexican restaurant will miss you.

I make this enchilada sauce but never use knorr chicken powdered because of all the chemicals in it. I use fresh minced union, garlic, fresh ground cumin & pepper and chili powder. I was born in Weslaco Texas in the Rio grande Valley and moved to California in 1967. I been told I cook food the old fashion way, spices, chiles, herbs, fresh garlic , onions , fresh broths, vegetables fresh quality meats. Lots of flavor from my fresh ingredients and good quality ingredients that I also grow. Avocados, vegetables from my garden, tomatoes, peppers, artichokes, herbs, peaches, apricots, nectarines, limes and Meyer lemons all from my yard.
All I can say is WOW! This is the best enchilada sauce I've ever tasted. It's even better than most of the restaurant sauces I've ever had. I don't think I've ever had one of Rachel's recipes that wasn't outstanding!

Gluten people use Brown ricw flower instead of flour. I made it for my wife its wonderful...Might not be as perfect with using reg flour but its Gluten free and my wife gave me the thumbs up! Your the best Rachel.

Hubby is from Albuquerque and although we live in Houston TX (tex Mex country) we prefer New Mexican style cuisine. I have never made a good chile gravy /sauce until now thanks to you. Rachel's Enchilada Sauce Ingredients/Shopping List (makes roughly 3 Cups) Ingredients Amount (Prep) (Notes) Butter 1 Tablespoon Vegetable Oil 2 Tablespoons All-Purpose Flour 3 Tablespoons Chili Powder 1 ½ Tablespoons Paprika 2 teaspoons Onion Powder 1 teaspoon Garlic Powder 2 teaspoons Ground Cumin 1 teaspoon Mexican Oregano ½ teaspoon (grind between palms before adding) Granulated White Sugar ½ teaspoon Chicken Broth 3 Cups Knorr Chicken Bouillon 1 ½ teaspoons Tomato Paste 2 teaspoons Sea Salt A pinch (to taste) Directions Abbreviations - C - Cup, TB - Tablespoon, tsp - teaspoon Prep Work (Before Starting to Cook) Hint - Cooking goes much smoother if you measure out ingredients before starting. Making Enchilada Sauce In large skillet over Medium-Low heat, add butter (1 TB) and olive oil (2 TB). Melt butter. Add all-purpose flour (3 TB) and mix continuously until “golden and smells nutty” to make a roux (for thicken sauce). Take your time and adjust heat as needed. Reduce heat to Low and add chili powder (1 ½ TB). Mix continuously with roux (30 seconds). Note - Lower heat more if needed so as not to burn roux and spices. Add paprika (2 tsp) and mix continuously (30 seconds). Add onion powder (1 tsp) and mix continuously (30 seconds). Add garlic powder (2 tsp) and mix continuously (30 seconds). Add cumin powder (1 tsp) and mix continuously (30 seconds). You should smell spices releasing their aromas. Rub oregano (½ tsp) between palms and add to skillet. Mix continuously (30 seconds). Add white sugar (½ tsp) (optional). Add some of chicken broth (½ C to start) and mix thoroughly. When chicken broth is mixed completely with roux/spices, repeat by adding more chicken broth (a little at a time) and thoroughly mixing. Note - Take your time adding broth and mixing until all chicken broth is mixed in. It will be worth the effort. Add chicken bouillon (1 ½ tsp) and tomato paste (2 tsp). Mix continuously (5 minutes) as sauce thickens. Place a lid on skillet and simmer enchilada sauce over Low heat while stirring every few minutes (10-15 minutes). Taste test and adjust seasoning (as needed). Serving Enchilada Sauce Use in cheese/beef/chicken enchiladas, for wet burritos/chimichangas or on tacos, quesadillas, eggs, etc.
I do think the sugar is important because it's a good balance, but it is optional...I always use vegetable oil because it doesn't change the flavor. Thank you so much for sharing. ❤️

(fyi - I don't trust the vegetable oils in grocery stores - too many caustic chemicals used in production)

I lived in Albuquerque New Mexico for 40 years and I'm now in Ohio for the past 20 years. As you know there are no Mexican restaurants in Ohio that make New Mexican 6:26 , or Tex-Mex Chile... Freezing in itself will marry the flavors..not necessary to wait if you’re freezing.

So the best enchilada sauce I've ever had in my life was Casa Guadalajara in Old Town San Diego. The Mexican Restaurants in that area do things right and amazing. Then I tried this recipe. This one is just as good, if not, better than the restaurants in Old Town San Diego. With some minor adjustments to the roux and different steps (like cooking the flour for several seconds to roast it more before adding the oil), i think I can make it better than any restaurant. I have made enchiladas twice now and they were both amazing. One with chicken broth, chicken bullion, and shredded chicken enchiladas. The other with beef broth, beef bullion, and ground beef enchiladas. The sauce is even amazing on a tortilla chip

There is nothing like the flavor of homemade enchilada sauce. My favorite way to eat it is in a bowl with refied beans and plenty of cheese over the top. I once used "chipotle chili powder"(🤢...I didn't care for it therefore I was disappointed as I desire traditional Mexican flavors) and I sincerely recommend using a chili powder you are familiar with the first time you make this
☝🏻Follow the instructions/directions Rachel gives you...from the ingredients such as Mexican Oregano and NOT Italian oregano to the way she layers the ingredients in stages because you are essentially building the sauce and it comes out perfectly😊👍🏻

I made this again, substituting white onions, garlic and unsalted chicken stock. Doubled the recipe because it went over so good. This is hands down the best red enchilada sauce I've ever had and I've traveled a lot. Anyone thinking about trying this just do it. Your favorite Mexican restaurant will miss you.

I make this enchilada sauce but never use knorr chicken powdered because of all the chemicals in it. I use fresh minced union, garlic, fresh ground cumin & pepper and chili powder. I was born in Weslaco Texas in the Rio grande Valley and moved to California in 1967. I been told I cook food the old fashion way, spices, chiles, herbs, fresh garlic , onions , fresh broths, vegetables fresh quality meats. Lots of flavor from my fresh ingredients and good quality ingredients that I also grow. Avocados, vegetables from my garden, tomatoes, peppers, artichokes, herbs, peaches, apricots, nectarines, limes and Meyer lemons all from my yard.

Gluten people use Brown ricw flower instead of flour. I made it for my wife its wonderful...Might not be as perfect with using reg flour but its Gluten free and my wife gave me the thumbs up! Your the best Rachel.

Hubby is from Albuquerque and although we live in Houston TX (tex Mex country) we prefer New Mexican style cuisine. I have never made a good chile gravy /sauce until now thanks to you. Rachel's Enchilada Sauce
Ingredients/Shopping List (makes roughly 3 Cups)
Ingredients Amount (Prep) (Notes)
Butter 1 Tablespoon
Vegetable Oil 2 Tablespoons
All-Purpose Flour 3 Tablespoons
Chili Powder 1 ½ Tablespoons
Paprika 2 teaspoons
Onion Powder 1 teaspoon
Garlic Powder 2 teaspoons
Ground Cumin 1 teaspoon
Mexican Oregano ½ teaspoon (grind between palms before adding)
Granulated White Sugar ½ teaspoon
Chicken Broth 3 Cups
Knorr Chicken Bouillon 1 ½ teaspoons
Tomato Paste 2 teaspoons
Sea Salt A pinch (to taste)
Directions
Abbreviations - C - Cup, TB - Tablespoon, tsp - teaspoon
Prep Work (Before Starting to Cook)
Hint - Cooking goes much smoother if you measure out ingredients before starting.
Making Enchilada Sauce
In large skillet over Medium-Low heat, add butter (1 TB) and olive oil (2 TB). Melt butter.
Add all-purpose flour (3 TB) and mix continuously until “golden and smells nutty” to make a roux (for thicken sauce). Take your time and adjust heat as needed.
Reduce heat to Low and add chili powder (1 ½ TB). Mix continuously with roux (30 seconds).
Note - Lower heat more if needed so as not to burn roux and spices.
Add paprika (2 tsp) and mix continuously (30 seconds).
Add onion powder (1 tsp) and mix continuously (30 seconds).
Add garlic powder (2 tsp) and mix continuously (30 seconds).
Add cumin powder (1 tsp) and mix continuously (30 seconds). You should smell spices releasing their aromas.
Rub oregano (½ tsp) between palms and add to skillet. Mix continuously (30 seconds).
Add white sugar (½ tsp) (optional).
Add some of chicken broth (½ C to start) and mix thoroughly.
When chicken broth is mixed completely with roux/spices, repeat by adding more chicken broth (a little at a time) and thoroughly mixing.
Note - Take your time adding broth and mixing until all chicken broth is mixed in. It will be worth the effort.
Add chicken bouillon (1 ½ tsp) and tomato paste (2 tsp). Mix continuously (5 minutes) as sauce thickens.
Place a lid on skillet and simmer enchilada sauce over Low heat while stirring every few minutes (10-15 minutes).
Taste test and adjust seasoning (as needed).
Serving Enchilada Sauce
Use in cheese/beef/chicken enchiladas, for wet burritos/chimichangas or on tacos, quesadillas, eggs, etc.
I do think the sugar is important because it's a good balance, but it is optional...I always use vegetable oil because it doesn't change the flavor. Thank you so much for sharing. ❤️

@@rachelcookswithlove I made changes - Vegetable Oil and took optional off sugar. I made an educated guess on when to add sugar and tomato paste. If you need a cookbook writer/editor let me know. (fyi - I don't trust the vegetable oils in grocery stores - too many caustic chemicals used in production)

When did u add the sugar and tomato paste?
You add the tomato paste after you add the chicken broth for the first time. You add the sugar after you add the chicken boullion.
I lived in Albuquerque New Mexico for 40 years and I'm now in Ohio for the past 20 years. As you know there are no Mexican restaurants in Ohio that make New Mexican 6:26 , or Tex-Mex Chile... I am so glad to have come across you are amazing recipes and tutorial videos! I can tell you I will be very busy in the kitchen this coming week. I did follow your flour tortilla recipe last night and they turned out amazing! I’ve always been on team green/white enchiladas but THIS RECIPE has definitely converted me. It’s so nutty and flavorful especially when the chicken stock is homemade!
