  • These chicken wings have 3 ingredients...yet they are some of the most addictive, munchy wings ever! This is a classic Thai appetizer, popular especially when people have a cold beer in their hands! Salty, crispy, and so satisfying. Typically they are deep fried, but I have found that shallow-frying works just as well. Give the first side (the side with thicker skin) lots of time to brown and crisp up, and cook the other side just until the chicken is done, and you'll have chicken with crispy skin and still juicy on the inside!

    About Pai:
    Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the RUclips channel Pailin's Kitchen.

    I actually made these a couple days ago with some key lime juice included with the fish sauce. They came out spectacularly. The finnished product is so much nicer than you'd think considering how simple it is.

    We have a similar recipe in Vietnam called "Cánh gà chiên nước mắm" which is Fried Chicken wings with Fish sauce. Slightly different, we mix fish sauce with mince garlic & chillies, lime juice and sugar in a separate bowl. We fry the chicken wings without marinate until the wings turns golden brown (some roll the chicken in corn starch or rice four, but I like to keep it simple, so I fry chicken wings just like that). When the wings turn golden brown, we quickly take them out and dip fully in the fish sauce that we repair earlier. Yummy yummy.

      ​@@Lyndabanh79 I normally make the fish sauce with a little bit of lime juice, that dilutes the fish sauce, so no need extra water, but it really depending the type of fish sauce and your personal taste. The answer is yes, you can mix a little bit of water.

    We Vietnamese also love to serve these fried chicken wings with beer! In Vietnam this dish is called "canh ga chien nuoc mam". Once my housemate made this dish and it was so yummy. While frying the chicken wings he made a sauce from fish cause, sugar, minced garlic, minced chilly peppers, and a touch of water. When the wings are cooked he removed them from the pan and heated the sauce 'til thick to coat the wings. Oh yum!

    i overmarinated mine in the Thai fish sauce. Went on for an hour. 15 mins is enough.
    I've done this last year and I'm making it again today. So good.

    Who runs out of salt... This girl! Lol. So I tried this recipe. It was delicious! So simple but such a complex saltiness. My family loved it. This is now my go to recipe. I used an air fryer and it was crispy and delicious! Thanks!

    I just couldn’t help myself- had no wings but had boneless skinless thighs, cut them into blobs and this was such an awesome!! We had with lime wedges, cilantro and basil and really was sad we were out of beer too!

    Thanks for your easy recipe 👍 will start to make this one from now on!! Air fryer for 400F and 20 mins, done! No oil needed because chicken skin had fat. Even easier to save those oil and clean up.

    I'm so glad your brother didn't know what to do with chicken wings, because these were superb, and easy. The fish sauce actually penetrated the chicken more than salt, and it only took 30 min.'s to merinate. Since I like to eat, I used the entire wing.

    I've just made some and i didnt have rice flour on hand so i used corn flour instead. it was delicious! the only thing is, make sure the wings are dry before dusting them with the flour. i've dry off the wings as much as i could and i even used a large sieve to cover the pan to reduce the splattering and it still did splatter.

    Will definitely try this recipe soon as I miss Thai food. It's so simple with only 3-4 ingredients. I used to joke with my Thai friend that Thai people uses fish/squid sauce in every food they can get hold of. 🤣

    Pailin, I live in Thailand, and have done for nearly seven years - love it here! I wanted to add a note to your comment about the bleeding chicken wings. They bleed here too! The reason for this is because of a growth hormone which is given as part of the chicken’s feed. A free-range chicken, common in the rural area of Thailand, will not bleed in this manner.

      That is the common misunderstanding people still have these days. Hormones have not been used in poultry industry for so long. It's actually illegal. Especially big names like CP or Betagro who export their product to almost everywhere in the world.

      I cook organic, antibiotic and growth hormone-free chicken and they bleed as well. I googled and found out that "Darkening around bones occurs primarily in young broiler-fryers. Since their bones have not calcified completely, pigment from the bone marrow can seep through the porous bones". There you go

    The flavor is the greatest. Didn’t have wings, but just had to try the fish sauce on thighs & baked. Didn’t have rice flour - sorry for the two changes, but just HAD to do it. The skin, oh boy, dripping goodness

    Man! I know exactly the flavor profile with these wings. Fish sauce is in our household heavily due to my wife being from Laos. I remember when she introduced me to fish sauce the first time and I wasn't on board right away due to the smell but then i tasted it and the taste is totally different from the smell. Now i love it and am addicted to it. LoL! I have made similar wings and other ingredients but using the fish sauce make the flavor unique the star of the dish and the taste is insane so i can relate to these wings u made.     In malaysia (penang) we marinate with shrimp paste or shrimp paste powder (belacan) , we call it belacan chicken, hope u can make this recipe soon 😍

    hi Pai! we also have our Philippine version... marinade Fish sauce and Calamansi without the flour... fry straight in the pan.. you get salty and tangy fried chicken!

    I always fry my chicken like this as well only with fish sauce and flou but i do add crushed garlic though when i marinate

      In Australia I got recommended the "Megachef" brand. Only to later find, that my local store here in Germany has it, too. So there must be something about it.
