Hi Johnny. I don't know if you remember me but I'm the guy who's off to a slow start. Major success, pancakes and bacon on the griddle were fantastic. i should have made more batter. Problem thought with Smash burgers, mine always fall apart. Can't really use the thermometer they're too thin. Is 93/7 ground beef too much.
Hi yes I remember. I'm glad the pancakes and bacon went well. So yes I would try switching to 80/20 and see if that helps out with the smash burgers. Also does your spatulas have a beveled edge? That really helps get under them when they are paper thin. When are they falling apart durint the flip? Let me know and I can give you some more tips.
My griddle is the most useful kitchen appliance I own. I made simple breakfast scrambled eggs, sausage and hash brown patties in 15 minutes. Quick and delicious.

For us, fried rice is the one that is hardest to do without a griddle. Keeping the smell and mess outside is a huge plus for us.

I've made the hash brown omelette in a cast iron skillet. It's doable as long as I don't make it too huge😊 It's one of my favorites👍

I've been thinking about using my two 9" round cake pans, butter the bottom or line w/ parchment or foil & fill 'em with cloth dried hash browns & smash 'em into the pan shape w/ paper towels to remove any more water & then flip 'em over onto the griddle, OR, bake 'em a bit to evaporate the water & hopefully brown the bottom, then flip 'em onto the griddle, hoping they would be sturdy enough to flip again. So many options...

I know this is a dumb question and I forgot my glasses before I watched this video but those smash burgers you were making……was that butter that was in the middle befit you flipped them ?.

Not a a dumb question at all. That was the burger sauce I made. Inn-n-out does that where they put some burger sauce down before they flip it.

I have become addicted to the flat-top. I found that I can cook more things on that than I can in my kitchen. Mainly because my kitchen has one of those stupid glass cooktops.
Hate my glass cook top too. We have winter here, so we bought a 17" Blackstone e-Series that I don't recommend. Lost it's ceramic coating non-stickiness very fast, so I use plenty of oil now & then still have to clean it with Bon Ami POWDER (not cleanser) and DOBI nylon mesh wrapped sponge. Fortunately, it only takes 3.2 seconds to remove lid & cook surface. I have to cook at 400 & 450 because it bleeds heat so fast with room temperature foods. Using frozen burger patties or frozen stir fry mix & temps drop like a rock and it takes forever to recover. Using meatballs that sat out from the fridge for an hour & smashing those will still drop temps, and by the time it recovers, 450F will melt the edge of every plastic spatula I've tried when you try to scrape a smash burger off the surface & it leaves particles / residue. SOLUTION = buy the carbon steel top VEVOR 22" indoor electric griddle & use steel spats! Tons of vids about that & other sizes.
@@harddocs Thanks for the info. I knew that the coated Blackstone wouldn't last. But when I said that in its review everyone jumped me over it. They said the coating won't come off. But I let it go at that.
My big 36" Blackstone is a dream and it doesn't stick.
I want to replace my glass top with a gas stove but can't afford the cost. There is a gas jet right at the stove already but the cost of stoves are so high now.
@@JWimpy - NOTE: the ceramic coating has not come off (like many teflon pans I've had) because I have been VERY disciplined about PLASTIC ONLY spats, but it has lost it's "slipperiness".
Since we got our outdoor propane 17" B-stone Adventure Ready w/ side burner & deep fryer (that's a mouthful) I am blown away at how easy it is to just scrape clean with steel spats, water & wipe, re-oil & call it DONE.
Even w/ this 17" B-stone indoor e-Series, I very seriously want a VEVOR 22" indoors.
@@harddocs Sounds great. I bought my son that 17" because he loved my 36" so well. But he doesn't cook for large gatherings like myself.
And I really cannot stand any cookware that has to be babied. I cut, scrape, and work my cookware hard. All cast iron or stainless steel in the house and the big Blackstone in the outdoor kitchen. I also have a barrel smoker. My Char-Broil BBQ finally wore out last year but I haven't missed it. I literally cook anything on the flat top unless I need to smoke it.

Once you go smash burger, you dont cook any othher burger. Ill go get a regular burger out of convenience, but the folks across the street from work smash em too. We get along well.
Don't overlook the griddle's ability to cook a whole side of sea bass, trout, or salmon. It's awesome on the griddle.

How do you do the rice on the griddle? Can you just put uncooked rice on the griddle and cook it that way?
No, you need to cook the rice in a pot or rice cooker then I cool it down in the fridge. Then you put it on the griddle with everything else e

Do u think weber q full griddle will do the same job on a smaller scale?
I've never used it before. Is that for the Webber charcoal grill or Webber gas grills?
@@JohnnyBrunet gas, its those smaller weber Q things. You can swap out grill grates with griddle plate instead. I guess it has a single burner so might be ok for recipes requiring just a single temperature zone.
@@Sgten01 ya the temps are what are hardest on those inserts. If it's just one burner than you will probably have some hot and cold spots.
So you won't be able to jump around in temp and do things like a full breakfast. But it should work fine for most other things like cheese steaks, fajitas, and smash burgers.
