    What a wonderful experience! I would love to do that. Such a warm and friendly family and so welcoming to the white stranger, LOL! The food had to have been some of the best you have ever had in your life.

    When I had a bbq in mexico one time, I ask my cousin if I can BBQ the texas way. Afterwards, not many liked a few pieces I cooked. They preferred my cousin's style instead. Not surprised. We were in Mexico. When my cousin tasted it, his response was, "No wonder it's different. You cook more like a Tejano than a Mexican."

    The arrechara kind of reminds me of Wagyu, same principle young tender fat cows with soft muscles to make tender meat. , Hopefully that isn’t $500 a pound though. 😂
    I grew up in Southern California and could get amazing Carne Asada from taco trucks and restaurants all over then I moved to the middle of nowhere in Illinois and it was torture and I never realized with a huge part of life carne Asada was. Lol. I spent several years trying to figure out how to make it in what was in the marinades and most of the recipes I found online tasted horrible and we’re nothing close to authentic Mexican food. It’s incredibly hard to find meat like that now, I live in Tennessee but I really miss carnicerea stores like they have all over Southern California. Carneia Sauta isn’t too bad you can make it with any good meat that’s flavorful with good marbling, ribeye makes great tacos but it’s still a little bit different but I would’ve gone crazy living in Illinois without figuring how to make this. I would love to hang out with a bunch of old Cooks was in making this stuff for years, there are a lot of recipes online but most of them aren’t nearly as good as they seem once you actually make them. A lot of it is learning how to prepare the ingredients, if you just throw garlic in a marinade it’s not the same as when you roast it first, same with tomatoes and onions and spices in many cases. Recipes don’t always defined the process for preparing each ingredient and in Mexican food and also an Indian food those little steps in preparing the ingredients make all the difference in the world. That’s why the way you’re doing it is going to yield much better results going in and working with people who have done this 1000 times and watching how they do it and tasting it first hand. I’m kind of jealous of you and would love to do this myself. Lol
    He’s right about gas grills also, most Mexican grilled meats have that Al Carbone taste in the flavor profile, wouldn’t even pellet grills can be great but charcoal is easy, honestly at this point I think gas grills are completely uselessAnd the food made on them might as will just be thrown in the oven.

    Mexican Chorizo is way tastier than Spanish Chorizo its more flavorful and bold. whereas spanish i find it sweet !
