    I think that cream is common in carbonara in Britain and Ireland, but not in the original Italian version. No idea why cream got added over here. It's confusing, because now there are two different dishes called carbonara. Both are good, but they're definitely different.

Cream was likely added as an easy way to achieve a creamy texture, bypassing the need for specific cheeses and avoiding the technical challenge of preventing the eggs from scrambling, making the dish more accessible and less technique-dependent.
