    Your recipe was amazing, worked perfectly. My husband had never had them with the red pepper, he loved them. In fact, so much we stuffed koosa and put them on top of the rolled grape leaves. We used onion slices on the bottom. My husband I grew up with his mom and sisters making these. Now I can too, thank you!

    Dolmades - dolma : actually dolma means stuffed in Turkish.
    Vietnamese usually fill with beef , shrimp etc serve on rice , We Turks fill them with rice and herbs .I tried vietnamese version of stuffed pumpkin flowers .We also fill them with rice .
    Greeks add suffix :) That is their contribution

    Thank you for this video!! May I ask for your opinion???? I've seen other dolma aficionados COOK the rice and chopped veggies BEFORE rolling it in the grape leaves, and then very lightly steaming the rolled up dolmas for 4 minutes. In your opinion, How do the flavors compare when it's done your way or their way? I loooove the freshly made dolmas sold at the Turkish markets , but they sell one large one (one large thumb size) for over a dollar each!! Soo pricey, so we want to make our own! Thank you in advance for your reply!❤

      Yes, you can and is better actually . Wash them good and blanching for one minute and put them after to the cold water and is ready to use it. In my country we do almost the same recipe without tomatoes more fresh herbs during the summer with fresh grape leaves.

    • @SixStringSteve
      @SixStringSteve Год назад

      I was going to ask the same question but see you asked six months ago, still no answer. Makes no sense to cook rice first as it cooks for 1.25 hours after being rolled.

    • @PredaBoon
      @PredaBoon Год назад

      @@SixStringSteve Some people rinse it some don't. As for cooking the rice, you're right, there is no need. In fact it needs to be uncooked since the herbs will shrink while being cooked, so you need the rice to expand to fill the place. The rice will also absorb some of the taste as well.

      You can wash the grape leaves from the brine in advance. You can also make the stuffing, roll the grape leaves and freeze the uncooked grape leaves in a single layer. Then when they’re frozen, transfer to an airtight container and freeze for up to 3 months. Defrost overnight in the fridge and then cook as usual.

      I have not tried it myself because I’ve heard of poor results. Brown rice needs extra cooking time as compared to white rice. That extra cooking time can result in overcooking the grape leaves.
