How to Make Nanny's Recipe for Clams Oreganata (Baked Clams)

    Recipe: How to Make Clams Oreganata
    1 dozen littleneck clams with reserved juice
    ½ to 3/4 cup fresh bread crumbs
    4 clove garlic, finely chopped
    1 tablespoon chopped fresh oregano (or dried if you don’t have fresh)
    2 tablespoons chopped fresh parsley
    4 tablespoons of grated cheese of your choice
    ¼ cup olive oil
    Pepper (optional)
    You can have your fishmonger open the clams for you and save the shells. If you cannot get the clams opened for you, pre-heat the oven to 450 degrees. Wash and scrub the clams and place them in a single layer on a sheet pan. Place in the oven for only 2-3 minutes, just enough to loosen the clams so they will easily open.
    Remove clams from oven and with a butter knife, pry open the clams over a bowl to catch all the juice that comes out. Once open, loosen the clam in its shell by sliding the knife under it.
    Preheat the broiler and adjust the rack to the top shelf.
    In a medium frying pan, add olive oil. When hot add garlic. Sauté until just sizzling, add bread crumbs, oregano, parsley, grated cheese, reserved strained clam juice, olive oil, and black pepper (if desired).
    Pack each clam with the bread crumb mixture.
    Do not overstuff. Place the clams back on the sheet tray. You can add a little water to the pan if you like. This will also help the clams stay moist. Put the tray under the broiler for 3 to 5 minutes or until the bread crumbs are brown and crispy.

    This is the way I love Clams Oreganata, no, bacon, no peppers, just the basic, and I love cheese on certain seafood, and this is one of them. Great job Hedy.

      I love them this way too. Don’t like it when they make stuffing for the clams.

      Throw some clam juice/lemon juice, pinch of garlic salt and pepper to ur taste and dip bread in the juice. Amen

    Welcome back! I refuse to eat more than 3 dozen of those clams :) By any chance did you ever go to the Clam Broth House in Hoboken, NJ? PS where I come down on the cheese/seafood question is if i make clams/mussels/scungile fra diavolo in red sauce with pasta cheese is OK.

    Well clams on really fish and this recipe sort of needs the cheese. It's not like this cheese sauce on them. I grew up directly on the coast of Maine and I always shucked my own clams. :-)

    I’m watching your recipe for baked clams and you told me you were from on 13th St. between first and Pleasant Avenue my family and I think I was born down there 70 years ago we were either From 114th St. or 115th St. between first and Pleasant Avenue had to be about the same time the families had to know each other how amazing is that my name is Danny Pagano. You said you and your family were from 113th St.

      We knew Pagano’s from 115th Street. My cousin Ann was married to a Milano whose mothers maiden name was Pagano. My mother and uncles were friends with Joey Pagano.
