There was a USS Odyssey in the Fan Series Star Trek: Hidden Frontier. Star Trek: Odyssey was a spin off series after the conclusion of the 7th season of Hidden Frontier. The Title ship had an experimental Slipstream drive that deposited the ship in the Andromeda Galaxy, that lead into an all out invasion by ships from that universe engaging the Federation, Romulans, and Klingons, in the prime universe Post DS9, Voyager, Nemesis.

Since you tied it in with the Odyssey-class, how about the U.S.S. Endeavour next? There's a long history with that name, from the first voyage of James Cook (with a coincidental tie-in to a certain genetically engineered villain), to numerous Starfleet ships, including a possible connection to Wolf 359 (which would tie it to another iconic Trek villain). Side note: as has already been mentioned in another post, Captain Keogh evacuated all non-essential personnel from the Odyssey to DS9 before entering the wormhole, thus seriously reducing the number of lives lost with the ships' destruction.

There is a fan produced series from around 2006 called 'Star Trek Odyssey' - 3 seasons are on RUclips - depicting a U.S.S.
