- Ingredients
Chicken - 1kg,
Onions - 1 large, 1 small thinly sliced,
Tomatoes - 4 large diced,
Ginger Garlic paste - 2 1/2tbspn,
Yogurt - 3 to 4tbspn,
Dry Fenugreek Leaves - 2tbspn,
Corainder leaves chopped - handful,
Green chillies - 3 make a slit in between,
Juilliene cut ginger - 1 to 2 inch,
Salt to taste and oil as required.
Ingredients for the Karahi Masala
Dry Red Chillies - 6 to 7,
Corainder seeds - 2tbspn,
Shahi Jeera - 1tbspn,
Black pepper corns - 1tbspn,
Cardamom - 2,
Turmeric powder - 1tspn,
Chaat masala- 1 1/2tspn,
Garam masala powder - 1tspn.
Dry roast the dry red chillies with corainder seeds, black pepper corns and cardamom for 1 to 2 mins on low flame. Then roughly grind it with all the powdered spices.
Method
Heat good amount of oil in a pot when it piping hot add thinly sliced onions to it.
Once the onions turns brown add the diced tomatoes.
Cover and cook on low to medium heat till the tomatoes are soft and smashed well.
Once done, uncover and add ginger garlic paste, then add the roughly grounded masala, roast it for 2 mins.
Now Add the washed and pat dried chicken pieces to it.
Also add salt then mix.
Cover and cook on medium heat for 5 to 6 mins.
Uncover and add whisked yogurt, dried fenugreek leaves, little chopped corainder, julliene cut ginger, slit green chillies and give it a mix.
Cover and cook on low to medium flame for 10 to 12 mins or until the chicken turns tender and soft.
Once its soft then add the remaning chopped coriander leaves, julliene sliced ginger, remaining green chillies and cook for 2 mins without cover.
Serve with either chapati, tandoori roti or Paratha.
