How to Make Roly Poly Pudding - The Victorian Way

    Mrs Crocombe is making Roly Poly Pudding with bacon, onion and mushrooms. The servants are in for a treat!
    INGREDIENTS
    200g plain flour
    75g suet (vegetarian alternatives are available)
    A generous pinch of salt
    Cold water
    Bacon or ham
    1 small onion
    Mushrooms
    METHOD
    Combine the flour, suet, salt and add a small amount of water a little at a time until you form a dough which is supple but not sticky. Set aside in a cool place.
    Dice finely the bacon, onion and mushrooms and mix them together.
    Roll pastry out with lots of flour. Spread with filling leaving about 1cm at the edges. Seal the pastry at the ends well, and at the long join, with a bit of water
    Wrap the pudding in a clean cloth which has been well floured.
    Put it in a pan with boiling water and leave it for upwards of 1.5 hours. It is fairly forgiving, and can be left for an extra half an hour or hour without much of an issue.
    Leave the pudding to cool, then carefully unwrap it. You can then slice it and eat as is, or fry in lard for extra flavour.

      I'm American and I dont like a whole lot of fried things. Cause people come up with weird things. Theres literally fried oreos and butter on a stick and I've heard of fried ice cream. Idk how they manage that but it's done. I like simple things. Like fries and occasionally a hash brown.

      Well at least that is more acceptable than that traditional dish which has been given the name of Spotted Dick.
      Interesting isn't it that Britishers did not bother much about the implications of this word but an American friend of mine pointed it out giggling uncontrollably.
      I had to tell him mayhap a trifle haughtily to Grow up which set off another round of hysteria in him, that he belongs to a Juvenile immature nation which is obsessed with inflated and protuberant body parts and other body functions and that is why any sort of innocent word would for him and his equally mentally arrested friend circle would always have double entendre connotations more often obscene than not.
      Like any other spoilt brat he got deeply offended- visible sign Donald Duck beak- and is not speaking to me That doesn't bother me much. The only problem is that I cannot eat Spotted Dick anymore.

      Apparently the reason for that is with wood & coal fired stoves you could never be sure of consistant oven temperature, but if you boiled it, you could, which is why they boiled everything back then, to make sure it was cooked through. Check out the historical cooking show Lords and Ladles, they go into this at length.

      Roly poly puddings are actually most commonly sweet and made with jam. This one just happens to be savoury - I expect it’s because the servants are eating it. Puddings don’t necessarily have to be sweet.

    I actually tried it. My whole familiy loved the recipe! I think it tastes way better if you bake it out in butter, but that depends on you. Just a tip: roll it together tight, otherwise it will fall apart and won't taste as good. Thank you for the videos! ❤💕

    Watching this took me back 50 years. My mum used to cook this! exactly the same recipe and then sliced & fried in lard. It's not for weight watchers but tastes brilliant. I used to love helping to make the pastry.

      Food for Upstairs seems to focus on presentation, delicate flavours, and expensive ingredients - it's for people who have hours to spend eating dinner, want to flaunt their wealth, and don't have to do hard physical work on their feet all day.
      Food for the Servants' Hall seems to be primarily filling, flavoursome, and usually suited to being eaten quite quickly (I think they'd have to get back to work fairly promptly, and might be called away if Upstairs wanted them for something).
      Most of this is just my speculation, I hasten to add!

      If we're being historically correct, remember the servants worked very hard labor jobs. So, the amount of calories with this meal, even if it's the only meal they had that entire day would be suffice to give them energy for their work day. If this were made in modern day, you'd be totally correct.

      It's much more possible "a cardiac arrest" using veggie oil (except olive oil) than lard or butter. Both fats are rich in vitamins, especially E and B12.
      The problem with Victorian (and modern) diets is SUGAR.

    Was not disappointed! I loved the slightly disapproving look she gave after she allowed that some people called the wrapped, pre-boiled poly ‘dead man’s leg.’
    I might opt for a puff pastry version, baked crispy brown.

      @@gracefuller9554 Very true. The whole point of the "pudding " process is to make it, wrap it up, and set it to boil on the back of a range for an hour or two. Sort of a "set it, and forget it" form of cooking that allows you to make something good, while freeing you up to do other things in the kitchen without worrying about ruining the dish. Baking, especially back then, is a trickier process, and you could easily burn something if you don't keep an eye on it.

    One of my favorite stories as a kid was Beatrix Potter's The Tale of Samuel Whiskers a.k.a The Roly-Poly Pudding, so when I saw the title of the video i was so excited!
    Such a simple and hearty recipe, I really want to try making it!

    My nan taught me how to make Roly Poly Pudding (both the sweet and savoury kinds) and I haven't had it in ages! Guess what I'll be cooking up in the next few weeks! You can fill them with just about anything but our family favourites were either sausage meat, sage and onion or Sunday roast left overs (including left over roast and green veggies and topped with any gravy left over from Sunday roast) for savoury and jam Roly Poly with warm custard or sweet white sauce for a dessert one.
    I've been diagnosed coeliac so I'll be trying it with gluten free flour so I'm not sure how it will turn out, but here's hoping. I may try adding an egg to the pastry (my nan sometimes did that anyway for "extra goodness") to help bind it and see how that goes.

      i don’t know if you have Bob’s Red Mill products available where you are (maybe online if not locally) but they make an amazing product called “gluten free 1 to 1 baking flour.” i was diagnosed coeliac in 2005, and back then i was having to mix crazy blends of like 5 different types of expensive flours in different ratios for different uses (such a pain). when the Bob’s product came out a couple of years ago, i figured it was worth a try, so i bought some and tried a few different things with it... made a cake, brownies, a loaf of bread, biscuits (cookies and bread biscuits). you use it just like wheat flour in the same measurements a recipe calls for, and all of them turned out beautifully. i actually cried, then when i had my mom and sister taste them, they did too. i don’t say this lightly: it really was life-changing for me.

    The way she fried them at the end reminds me of one of my favorite Vietnamese dishes, banh tet! It has a pork filling inside a sticky rice roll and you fry it. It’s so good 😊

    This dish reminds me of the one my late Grandmother used to make. She was from Belfast Ireland, and she made a fruit filled version of this with currants called "Plum Duff". After she did the prep for it, she would boil it in a newly bought (and washed) pillowcase turned inside out and tied up. I never ate any of it but it was fun watching her make it.

      That's really interesting. Here in The Bahamas, we have a similar dish made with guavas called Guava Duff. I suppose it's one of those old, largely forgotten dishes that only a few people still make.

      Well, the main reason I never ate any was because my Grandmother used to make it for her brother. Plus at the time I was only around 5 or 6 years old. My brother even had to remind me that my Grandmother never made it for us but instead for her brother. If she were alive today and made it, I definitely would try it for sure. :)
