Mrs Crocombe Receives a “Taste of America" Food Parcel - The Victorian Way & Townsends Collaboration

Mrs Crocombe has received a parcel from Mr Townsend, including the ingredients and recipe for making Indian Pudding.

INGREDIENTS
A quart of milk
1 1/3 cups cornmeal
4 eggs
6 ounces of dried blueberries
3 ounces of butter
Spice
Sugar
METHOD
Gently heat the milk and add the cornmeal while stirring continuously. Stir until the mixture begins to thicken.
Let stand until cool enough to add the eggs and butter. Add spices to taste. I recommend a bit of ginger and cinnamon - and don't forget the nutmeg.
Add sugar to taste.
Add blueberries.
Pour into a well greased bowl or mould.
Bake in a middling quick oven for about an hour. Serve warm or cold with a pudding sauce or maple syrup. (We recommend setting your oven to 160° Celsius | 320° Fahrenheit | Gas Mark 3 - but make sure you keep an eye on it).

I was quite surprised to see Mrs. Crocombe opened the parcel before opening the letter, however, it does show that she was eager to learn more about Mr. Townsend's culture, so I think he can accept the slight change in order when it comes to opening a gift ;)

I honestly forget that I’m watching a modern women portray a character on a RUclips video when I watch these. The subtle nuances, like “Hmm, it doesn’t look very pretty. I think I cooked it to long.” make it so realistic. I love it.
It's just not a pretty dish, she was soo polite about it.
Am I the only one who wanted to know what was in the the jar, bottle, and bag? I thought they were the ingredients for the pudding.
Olisa Hunt It was the cornmeal, dried blueberries, and maple syrup. Those are the things from America that Mrs. Crocombe wouldn’t have had easy access to. The other stuff she would have had or were perishable and couldn’t be sent.

Americans were fairly cultured back in the 1800s, many were well read books circulated widely and were the main form of entertainment.
Those are snacks, and not very good ones. We have plenty of dessert (pudding) recipes that would rival even Great Britain. Try baking a black raspberry pie, or a apple using North American spy apples, properly made sugar cookies, or blueberry cobblers, and you'll find that there is a lot more to our cuisine than processed junk food.
I'm digging this historical cooking expanded universe.

“ the Victorian way “ takes place in the early 19th century as well as a small bit of the late 18th century.
“ Townsends “ takes place mainly in the 17th is and 18th century.
GUYS THEY DID IT.
Erm the Victorian Era was definitely not in the 18th century(the 1700s), as it didnt start until the 1840's and lasted until the start of the 20th century(aka 1900s), as that was the start of the Edwardian Era

Maybe Mrs. Crocombe shouldn’t have skimped on the eggs.
That's actually an interesting thing to keep in mind when following very old recipes! The chickens we have now actually lay much larger eggs than the breeds they would have had in the 18th century- so if you use all the eggs the recipe wants you to, it often ends ups being too much.
I have a cook book with old german recipes and in one of the cake recipes it says to put in 12 eggs 😲 And I was like yeah no I'm not doing that. And it worked perfectly fine with 5 eggs.
That shows the real difference between Victorian and late 1700's cooking standards.

I was today years old when I found out blueberries were native to America.
European bilberries are sometimes also referred to as blueberries, I believe. American blueberries are the large ones. European ones are the small ones you're most likely to find in a forest.
We've got blueberries out East and their cousins, huckleberries, out West (they've never been successfully cultivated, so are pretty valuable). I've found several MASSIVE patches of wild blueberries in my city's parks! Going picking in a week or two

Ah, my first full-time summer job! Picking blueberries at least 8 hours a day when I was 9 years old. Our neighbors had - not sure, really - 20 or 25 acres of blueberry bushes. Some of the acreage was “you-pick-‘em” for the public, some was picked & packaged by employees for sale. I was ‘promoted’ to the sorting shed the summer I was 10. Honestly, though, I preferred picking. Hours sitting on a bar stool in a hot metal shed picking through berries on a conveyor belt was uncomfortable & stultifying. And disorienting in the beginning! The first time they stopped the belt after we’d been sorting for a couple of hours, my brain kept going and I fell off my stool! Fyi, I grew up on the west coast of Michigan. Big blueberry industry there. (Confession/side effect? 🤫 I don’t like blueberries.)

Sharon Ballantyne and it’s not just that every dessert recipe from Townsends has nutmeg in it - *everything* has nutmeg! Baked fish, barbecue, meat pie, jam - everything! At the time it was treated how we treat superfoods today - it’s super healthy so you must eat it whenever you can 😊

You're welcome, Katheryne :) We don't ever use the powdered ourselves any more. We switched to whole nutmeg almost 10 years ago (family of five) and are still on our second one. It's not our most frequently-used spice, but we definitely get a lot of mileage out of a single nut. Soooo many pumpkin pies. So much nut bread. All that baklava...
My grandmother was born in the late Victorian Era, and I lived with her growing up. Mrs. Crocombe reminds me of her - I definitely learned how to cook, clean, sew, write legibly using a fountain pen, have manners, respect people, etc. Thank you, grandma!

@@nikosfilipino It sounds odd at first, but they could easily be young enough to be fine using YT and stuff. Someone born in the late 1800's would have been 80-90 in the 1960's and 70's, giving someone now in their late 60s-70s enough time to spend with their grandparent to learn things from them.

I think the thing I love most about this is that Mrs. Crocombe explains how she will go about it based on things she observes in the recipe, and then also shows & acknowledges that the end result was most likely not how it was supposed to come out and mentions what she would do differently in order to achieve the correct result for the next time. ♥♥
I loved her reaction to the finished pudding - both before and after tasting. I would love to see her modifications to make it suitable for Lord and Lady Braybrooke.

Maize is very nourishing, for people as well as for livestock. And the climate of America isn't always suitable for growing wheat, rye, or barley, so we make do with maize. But maple syrup is a great delicacy! I hope you enjoy it as much as we do!

"Corn" is a generic name for "grain". The main grain one consumes depends on their part of the world. I am no expert however I do believe Barley is the corn for some, rye for others, rice for still others, oats and other grains. Maize is the grain for the Americas. All have the same amount of nutrition - grains are carbohydrates - long strands of molecules of starch while sugars are shorter chains. The hulls are the fibrous part of the grain or "corn". USA calls maize "corn".
@KP You're so right about that! The fiber is the main component of the grain of white rice, which is nutritionally void after its hull has been removed. Interesting is that without the PEEL, we lose ALL vitamins of common produce such as potatoes and apples - 2 of many which are customarily consumed without peel. White flour has lost the germ of the wheat and must be fortified as well. All good to know!

At the Townsends channel, there are the customary stocks and a pillory for dissenters! Well, not really. Probably the worst that could happen to any dissenter is that they'd be offered some of the channel's food. Spitchcocked eels might be in order in this case, with no pudding afterward. ;)
My guess, is accidental dislikes. I've done it a few times with videos I liked and haven't noticed. Odds are a few people might accidentally thumb the dislike button without noticing, especially when there's over 130,000 people watching!

He would be very impressed. Audley End was originally a multi courtyard palace built for James I . After the Glorious Revolution it was returned to the Earls of Suffolk, who hired Sir John Vanbrugh to tear down the wings built for Charles II's courtiers and mistresses and make it into a family country house. The Baybrooks hired Robert Adam to redecorate and the 3rd Baron acquired a substantial art collection to go in it.
