In 1881 there were two types of commonly used yeast. One was brewer’s yeast, sometimes called barm, which was the froth taken from the top of beer when it was brewed. It was quite weak and not very reliable. By the 1850s a new type of processed yeast was available, known as German yeast or compressed yeast. It came in blocks and is usually sold as fresh yeast today. You could use a sourdough bread dough, but it was rare in Victorian Britain and regarded as 'poverty food.' What is lardy cake? Lardy cake is a bread dough based cake which was very popular in the Midlands and western East Anglia. What's a baker's dozen? A dozen is of course 12 of something, but a 'baker's dozen' refers to 13. A leading theory for this is to do with the size of loaves. In Medieval England, bakers found to be selling undersized loaves could face fines or even flogging. So it's thought that many bakers supplied an extra 13th loaf with their dozen, just to be on the safe side - hence, Baker's Dozen. How did Mary-Ann glaze the rolls? A common way to get a nice glaze on bread rolls is with an egg-wash. Just brush on a mixture of egg and water before baking. Mr. Strutt is making a short train journey to his townhouse in London. He is expected to avoid starvation during the journey with only 6 sausage rolls, a plate of sandwiches, a plate of cream drop biscuits, raspberries and cream, 2 bottles of raspberry-ade, and a bottle of claret. I doubt that he'll survive the journey on such meagre rations.

I enjoy the extra notes of social change and continuity. We get bread from the baker now and no longer use brewer's yeast. However, Mr. Strutt's man servant travels second class, so Mr. Strutt won't have anyone at hand to slice or prepare his food for him and thus needs ready to eat vittles.
@@lenabreijer1311 He might get some of the remaining sausage rolls. Mrs. Crocombe only packed six into Mr. Strutt's basket, so there were plenty left on the table.
That seems like a lot of food for one person on a short train journey (2-3 hours I think). I have to say, Mrs. Crocombe’s technique in handling the dough was not the best. But maybe that’s why they get their bread from the baker now!
@@gerardacronin334 I think the train was much slower back then and depending on how long each stop took then it might make sense plus providing a generous picnic was probably also a source of pride for Mrs Crocombe no matter how short the journey

I have the pleasure of teaching my third graders the story The Wind in the Willows right now, and I plan on using this to show them a visual representation of what the main characters' picnic might've looked like. 😊 They'll be so excited! We have loved learning lots about the UK and we love Mrs. Crocombe! ❤

Oh my god I just noticed the easter egg/foreshadowing! At 4:44 you see a bunch of recipes from Mrs C's cookbook. The one on top is the vegetable salad, which was the previous episode; the two under that are the sausage rolls and raspberryade from this one; and then at the very bottom is cherry pie, which was in the episode after this one! Dangit, now I'm going to look for hints like this in all videos from now on
Here in México we make something like the raspberryade but with mangoes, papayas and pineapples, you can also add wine... it's very delicious with wine if it's very cold.

I really does make a difference to have a good relationship with good suppliers. I live near a market hall that was established in the very early 1800s. The quality and prices are much better than what I used to buy at supermarkets. The chicken I buy at my butcher's (established circa 1880) there, is rich with flavour. And the produce I buy at my greengrocer's there, is seasonal, local, and perfectly ripe... unlike the supermarkets' produce, which was shipped in from a long way away, while still unripe.
When straining through a cloth, wet your cloth well first so that you done waste liqour by it being absorbed by the dry cloth: important if you are dealing with a small quantity of liquid.
She's back! I never thought I'd find such joy watching someone strain liquid into a bottle, but here we are. I hadn't imagined that historically-based fiction could be so charmingly entertaining.
What makes you think this is fiction? This is a re-enactment. The dishes cooked are from a very popular cook book. Of the time, as well as notes from the head of the kitchen and head cook. Everyone in the house staff that could write kept daily notes of what occurred in there job.
This video had it all. Shade, discussion of the daily life and the surroundings, shade, business advice, shade, multiple foods, shade, some packaging/planning tips, and oh yea, some shade.
Two lots of shade, no less! One about the lemonade/orangeade being “popular” (you just KNOW she means “common”), and the refreshments at the station (as if they’d be anywhere near as delicious as Queen Crocombe’s). Did I miss any?
I’m sure it’s been suggested before but I’d love a mini-episode series with the actors of Audley End House around Christmas or Easter (with Mrs. Cromcombe’s cooking saving the day) sorry for misspelling her name. Agreed. Although, for me, something like Downton Abbey but much less stressful and dramatic. Something with a relaxing tone like Japan's Miadnight Diner.
I don't try the recipes but the gentle lighting, her voice, the pacing, the music, the writing, and cinematography... there's just something about the entire combination that makes this entire series just very relaxing. In a time where the world feels like it's burning down, this series is such a blessing.
There should be cooking drama show, starring Mrs. Crocombe. Every week she would have a featured recipe that she shows us how to make, along with filling us in on all the gossip and goings on around Audley End. We could see other characters, and maybe even see Lord and Lady Braybrooke! And at the end of the episode she gets in her little passive-aggressive digs while she enjoys the goodies she's saved for her half day.
When I was a kid I used to think it strange how in older books I read such as Heidi people would just put food in their pockets, but now that I'm older I realise that people back them probably didn't store change in their pockets and have them filled with lint and receipts that went through the wash.
you always kept your money (coins) in a purse (generally a small drawstring bag) that would hang from your belt or in a pocket inside the jacket or tunic you wore.
Once you see the size of Victorian pockets, you'll understand. And those are nothing on panniers in the 1700s, you could fit a whole live chicken on each hip with pannier pockets!
Ok who else thinks this could be a whole tv series. Maybe call in the whole team and the gardens. But focus only on the servants. Dont even need to see lord and lady way more fun
It’s not exactly the same thing…but there was a great show called; *Lords and Ladles,* which had a team of chefs going to these manors and recreating the exact historic menus that were documented/served (typically the menus were for a special occasion). They use not only the exact recipes, but try to always use the same cooking equipment, types of ingredients, harvesting/hunting practices and methods of preparation-even the tables are set in an era accurate way! (And since the items are usually passed down as family heirlooms, oftentimes the tables are set with the very same decor/serving items that were used at the actual event). I wish it had been given far more seasons than it was-but the few seasons we have are still fascinating!!

Most people had a fairly good relationship with their personal staff such as ladies maids and valet. Imagine the stories that they would have about the master or mistress, and could spread if aggrieved. In the film "Gigi" Honoré tells Gaston that he'd like to sack his valet, but the man knows too many secrets.
I think that you'd be surprised. However strict a cook was with her staff, generally she would be friendly towards the local shop keepers. Imagine the revenge that an offended supplier could carry out: products "out of stock", late delivery, and so on. Each shop probably was the only local place to get goods, so a canny cook like Mrs Crocombe would not risk antagonising them.
@@PLuMUK54 There would have been plenty of butcheries, bakeries, greengrocers and farmers around to get goods from. Very unlikely to have only one of each unless it was a tiny village.
Trains were a lot slower at the time, it'd probably take triple the time it does today, not counting longer stops at stations, or delays due to passing cattle or engine trouble
@@mynamejeff3545 it's about an hour today from London Liverpool St to Audley end (lovely day out, highly recommend, but clearly I need to up my snacks game next time). One can look online (e.g. National Archives) at Victorian train timetables and the journey, depending on the service, is approximately two hours. After the "Railway Mania" of the 1840s there was a lot of infrastructure build and train travel was considered fairly reliable, especially in the Home Counties. Even tripling that, I think I'd survive with that picnic. Yet, I believe Mrs Crocombe, redoubtable as she is, was preparing for every eventuality by giving one adult man a half dozen large sausage rolls; the same again of sandwiches; about the same of some generous looking biscuits; plus strawberries and cream; two bottles of raspberryade and a bottle of claret from Mr Lincoln for a journey of way less than half a day. I doubt he would have needed to resort to the inferior refreshments available at either station.
I actually find it kind of surprising how much this shows a nineteenth-century country manor house functioning in ways I think of as "urban": bread bought from a bakery, and sausage from a butcher's shop, rather than having their own baker to make bread from grain grown on the estate and their own butcher to prepare meat from livestock raised on the estate. I guess you have to go farther back to reach the times when these estates were more self-contained.
Butchers have been a village mainstay for a long time, not many people want to deal with all that blood and gore to clean up and the butcher would have more variety than just going to kill an animal (not to mention if you want a cut of cow or pig there's a lot of heavy duty work to cleave the body apart while saving as much meat as possible). Villages also usually had a baker bc ovens were huge fire hazards but I'm guessing back when white flour was a lot rarer it made more sense to make bread in the manor since the stuff from the village baker was probably 'yucky' whole wheat and barley.

For those asking why there is no food for the staff accompanying the guest: He will usually get a staff meal from the kitchen or has to buy something himself. Staff do get paid. The family's employees are hired to work for the family, not for the employees. He can just get his own food since he is paid. I mean in today's world if the boss is eating a nice meal in a big diner, does he pay for the same meals for all the staff too? Then what's the point of paying the staff for their daily life? The ingredients used at high tables are usually expensive and are meant for the family.

I advise you to binge watch "Vicious" episodes. its a british sitcom with sir ian McKellen and sir Derreck Jacobi. its absolutely hilarious. all full episodes are on youtube. Laughing produces all kinds of good things in the brain which is very healthy. McKellen and Jacobi ( Stuart and Freddy) make insulting into an absolute art form.

I don't know why but i really love the initial opening sequence with the manor and music. It always put me in a good mood, setting the tone for a good video.

If you're curious about the history and impact of the railways in Britain, there's an excellent BBC series called "Full Steam Ahead", starring Ruth Goodman, Peter Ginn, and Alex Langlands. It starts with the earliest small trains built for mines, and continues to the modern era. And one episode covers the railways' impact on the foods people ate---including at railway station cafés, when trains usually stopped for 10 minutes at each station, to allow passengers to have a very quick meal, or use the loo.

Life in the Victorian manor seem so normal and peaceful with its own rhythm according to seasons and social obligations; for the upstairs and downstairs. There’s a certain sense of security in the predictable. Changes may seem exciting but know how your day to day goes would make me feel like the world is right.
I think that might be the reason why period romances are so popular. The authors try to convey that sense of order, with everyone "knowing their place" which can be very reassuring.
Psychologically, even positive change causes stress. It makes sense that some people would find an inflexible structure dictating their days soothing. It would probably contrast horribly with any necessary changes and cause so much distress… Maybe that was why they made “an occasion” out of so many transitions - to help them adapt their inflexible thinking to changes.
Remember this is a romanticized image of what it was like to live and work in a Victorian mansion: this exact life was infamous for being stifling and mind-numbingly dull for the upper classes, and hard work for little pay for the servants (Mrs. Crocombe has only a half-day a week off, and that's for a comparatively well-respected upper servant). There were a lot more exciting places to be at the time.
I really appreciate whoever does the captions for these videos because I'm autistic as hell and struggle hearing the words sometimes - it's not a hearing issue my hearing is perfect they just don't quite register in my brain as words, the captions really help
It speaks rather a lot about all the unusual dishes this channel has shown, that i accidentally heard Raspberry eggs and didnt think twice about it untill she listed of the ingredients.
I made the sausage rolls they where lovely! I've always done recipes the old fashioned way my nana used to always say "the old ways are the best ways." She was a cook for nearly 40 years in various areas so you can guess the food was amazing!
I had to wait until this morning so I could enjoy my coffee while Mrs Crocombe creates a delightful picnic basket and throws shade at station refreshments. 😉

It's interesting that sausage rolls have been around since at least Victorian times. I'm not sure I've ever seen them made with regular bread dough, the ones I've seen in the UK are more like puff pastry.
I love how little wasted packaging there is, how everything is to be reused and built for purpose. If we lived this way, the summer now would not be so damned hot and dry.
Blame the big corporations that arose during the early 20th century. They encouraged wastefulness and excesses. Took away affordable public transport to force people to buy automobiles, began using forever chemicals in manufacture and did lots of harmful long-term things.
The trouble is, you dont have a man servent to carry around that large basket and 2 glass bottles. And you would have to carry it, without the ability to stash it in your car.
This hit at just the right time for me. As my life is literally falling apart, the simple, quiet and joyful nature of this program, the orderliness of everything....just THANK YOU.

Here in México we make something like the raspberryade but with mangoes, papayas and pineapples, you can also add wine... it's very delicious with wine if it's very cold.

I really does make a difference to have a good relationship with good suppliers.
I live near a market hall that was established in the very early 1800s. The quality and prices are much better than what I used to buy at supermarkets. The chicken I buy at my butcher's (established circa 1880) there, is rich with flavour. And the produce I buy at my greengrocer's there, is seasonal, local, and perfectly ripe... unlike the supermarkets' produce, which was shipped in from a long way away, while still unripe.

She's back! I never thought I'd find such joy watching someone strain liquid into a bottle, but here we are. I hadn't imagined that historically-based fiction could be so charmingly entertaining.
I strain my fresh carrot and celery juice into bottles all the time.
What makes you think this is fiction? This is a re-enactment. The dishes cooked are from a very popular cook book. Of the time, as well as notes from the head of the kitchen and head cook. Everyone in the house staff that could write kept daily notes of what occurred in there job.
This video had it all. Shade, discussion of the daily life and the surroundings, shade, business advice, shade, multiple foods, shade, some packaging/planning tips, and oh yea, some shade.
Two lots of shade, no less! One about the lemonade/orangeade being “popular” (you just KNOW she means “common”), and the refreshments at the station (as if they’d be anywhere near as delicious as Queen Crocombe’s). Did I miss any?

Agreed. Although, for me, something like Downton Abbey but much less stressful and dramatic. Something with a relaxing tone like Japan's Miadnight Diner.

I don't try the recipes but the gentle lighting, her voice, the pacing, the music, the writing, and cinematography... there's just something about the entire combination that makes this entire series just very relaxing. In a time where the world feels like it's burning down, this series is such a blessing.

There should be cooking drama show, starring Mrs. Crocombe. Every week she would have a featured recipe that she shows us how to make, along with filling us in on all the gossip and goings on around Audley End. We could see other characters, and maybe even see Lord and Lady Braybrooke! And at the end of the episode she gets in her little passive-aggressive digs while she enjoys the goodies she's saved for her half day.
When I was a kid I used to think it strange how in older books I read such as Heidi people would just put food in their pockets, but now that I'm older I realise that people back them probably didn't store change in their pockets and have them filled with lint and receipts that went through the wash.
you always kept your money (coins) in a purse (generally a small drawstring bag) that would hang from your belt or in a pocket inside the jacket or tunic you wore.
They wrapped them in brown paper with a string.
I do occasionally have "Pocket Cheese". Or "Pocket Snacks", I have a tendency to just put stuff in my pocket. And very often, it's my snack.
Once you see the size of Victorian pockets, you'll understand.
And those are nothing on panniers in the 1700s, you could fit a whole live chicken on each hip with pannier pockets!

It’s not exactly the same thing…but there was a great show called;
*Lords and Ladles,* which had a team of chefs going to these manors and recreating the exact historic menus that were documented/served (typically the menus were for a special occasion).
They use not only the exact recipes, but try to always use the same cooking equipment, types of ingredients, harvesting/hunting practices and methods of preparation-even the tables are set in an era accurate way! (And since the items are usually passed down as family heirlooms, oftentimes the tables are set with the very same decor/serving items that were used at the actual event).
I wish it had been given far more seasons than it was-but the few seasons we have are still fascinating!!
PBS needs to get on this.
In Spain we have "bollos preñados" (Lit. Pregnant buns 😆) which are similar to sausage rolls but they have chorizo instead of sausage meat.

Most people had a fairly good relationship with their personal staff such as ladies maids and valet. Imagine the stories that they would have about the master or mistress, and could spread if aggrieved. In the film "Gigi" Honoré tells Gaston that he'd like to sack his valet, but the man knows too many secrets.

I have a feeling that Mrs Crocombe's idea of a good relationship is different than the food suppliers idea of a good relationship...
I think that you'd be surprised. However strict a cook was with her staff, generally she would be friendly towards the local shop keepers. Imagine the revenge that an offended supplier could carry out: products "out of stock", late delivery, and so on. Each shop probably was the only local place to get goods, so a canny cook like Mrs Crocombe would not risk antagonising them.

Trains were a lot slower at the time, it'd probably take triple the time it does today, not counting longer stops at stations, or delays due to passing cattle or engine trouble
@@mynamejeff3545 it's about an hour today from London Liverpool St to Audley end (lovely day out, highly recommend, but clearly I need to up my snacks game next time).
One can look online (e.g. National Archives) at Victorian train timetables and the journey, depending on the service, is approximately two hours. After the "Railway Mania" of the 1840s there was a lot of infrastructure build and train travel was considered fairly reliable, especially in the Home Counties. Even tripling that, I think I'd survive with that picnic.
Yet, I believe Mrs Crocombe, redoubtable as she is, was preparing for every eventuality by giving one adult man a half dozen large sausage rolls; the same again of sandwiches; about the same of some generous looking biscuits; plus strawberries and cream; two bottles of raspberryade and a bottle of claret from Mr Lincoln for a journey of way less than half a day. I doubt he would have needed to resort to the inferior refreshments available at either station.
I love the little bits of commentary regarding the rest of the staff. It's such a nice historical nod to the chain of power in such a big household.
I actually find it kind of surprising how much this shows a nineteenth-century country manor house functioning in ways I think of as "urban": bread bought from a bakery, and sausage from a butcher's shop, rather than having their own baker to make bread from grain grown on the estate and their own butcher to prepare meat from livestock raised on the estate. I guess you have to go farther back to reach the times when these estates were more self-contained.
Butchers have been a village mainstay for a long time, not many people want to deal with all that blood and gore to clean up and the butcher would have more variety than just going to kill an animal (not to mention if you want a cut of cow or pig there's a lot of heavy duty work to cleave the body apart while saving as much meat as possible). Villages also usually had a baker bc ovens were huge fire hazards but I'm guessing back when white flour was a lot rarer it made more sense to make bread in the manor since the stuff from the village baker was probably 'yucky' whole wheat and barley.

For those asking why there is no food for the staff accompanying the guest: He will usually get a staff meal from the kitchen or has to buy something himself. Staff do get paid. The family's employees are hired to work for the family, not for the employees. He can just get his own food since he is paid. I mean in today's world if the boss is eating a nice meal in a big diner, does he pay for the same meals for all the staff too? Then what's the point of paying the staff for their daily life? The ingredients used at high tables are usually expensive and are meant for the family.
Now Mrs. Crocombe is claiming her share in what she makes. Legend!!

I advise you to binge watch "Vicious" episodes. its a british sitcom with sir ian McKellen and sir Derreck Jacobi. its absolutely hilarious. all full episodes are on youtube. Laughing produces all kinds of good things in the brain which is very healthy. McKellen and Jacobi ( Stuart and Freddy) make insulting into an absolute art form.
There's no need to sit underneath a tree for shade, Miss Crocumbe has plenty of that to go around.

If you're curious about the history and impact of the railways in Britain, there's an excellent BBC series called "Full Steam Ahead", starring Ruth Goodman, Peter Ginn, and Alex Langlands. It starts with the earliest small trains built for mines, and continues to the modern era. And one episode covers the railways' impact on the foods people ate---including at railway station cafés, when trains usually stopped for 10 minutes at each station, to allow passengers to have a very quick meal, or use the loo.

Life in the Victorian manor seem so normal and peaceful with its own rhythm according to seasons and social obligations; for the upstairs and downstairs. There’s a certain sense of security in the predictable. Changes may seem exciting but know how your day to day goes would make me feel like the world is right.
I think that might be the reason why period romances are so popular.
The authors try to convey that sense of order, with everyone "knowing their place" which can be very reassuring.
Psychologically, even positive change causes stress. It makes sense that some people would find an inflexible structure dictating their days soothing. It would probably contrast horribly with any necessary changes and cause so much distress… Maybe that was why they made “an occasion” out of so many transitions - to help them adapt their inflexible thinking to changes.
she got a 1/2 day off each week. there were no weekends yet. if you weren't gentry or rich, your life was drudgery.
Remember this is a romanticized image of what it was like to live and work in a Victorian mansion: this exact life was infamous for being stifling and mind-numbingly dull for the upper classes, and hard work for little pay for the servants (Mrs. Crocombe has only a half-day a week off, and that's for a comparatively well-respected upper servant). There were a lot more exciting places to be at the time.

It speaks rather a lot about all the unusual dishes this channel has shown, that i accidentally heard Raspberry eggs and didnt think twice about it untill she listed of the ingredients.
I made the sausage rolls they where lovely! I've always done recipes the old fashioned way my nana used to always say "the old ways are the best ways." She was a cook for nearly 40 years in various areas so you can guess the food was amazing!

It's interesting that sausage rolls have been around since at least Victorian times. I'm not sure I've ever seen them made with regular bread dough, the ones I've seen in the UK are more like puff pastry.
I love how little wasted packaging there is, how everything is to be reused and built for purpose. If we lived this way, the summer now would not be so damned hot and dry.
Blame the big corporations that arose during the early 20th century. They encouraged wastefulness and excesses. Took away affordable public transport to force people to buy automobiles, began using forever chemicals in manufacture and did lots of harmful long-term things.
The trouble is, you dont have a man servent to carry around that large basket and 2 glass bottles. And you would have to carry it, without the ability to stash it in your car.
This hit at just the right time for me. As my life is literally falling apart, the simple, quiet and joyful nature of this program, the orderliness of everything....just THANK YOU.
