Holy doodle, great recipe. And easy to modify. Whole wheat flour and still fluffy. 1/8 cup sugar and berries' sweetness came through, no need for sugary toppings. Used water instead of milk for my sin lactose friends. I really liked how the thicker batter kept the mountains of blueberries from sinking. Thank you very much. I used thawed out frozen berries, still worked.

Hi Tracy, I made your healthy blueberry cake recipe and I love it! I love avocado oil cake recipe. I substituted 1/2 cup of milk with 1 cup of low fat (3%) sour cream and 3/4 cup of white sugar with 3/4 cup of swerve sugar. Cake came out moist and delicious. Super yummy. A must eat. Trust me…you will not regret this. The only thing I have to remind you is to make sure your blueberries are dried and not wet….just like what Tracy said….dried blueberries…..lol….I don’t wash my blueberries and they came out so much better. 😋😋😋

I didn’t have fresh blueberries so I had to use frozen ones...the juices from the frozen blueberries made my cake look “bluish purple”. Initially, I felt I goofed up the Oven settting so the cake colapsed from the middle but then I put it back in the oven and eventually it settled well. I think I did the toothpick test toeards the edge !! Anyway, I did a cheese cream icing on it with pink colour...it was yumm..wish I could paste a pic here. Thanks so much 🤩🤗

Made this today using a large loaf pan for breakfast celebrating Fathers Day. Didn’t have homo milk so I used cream…..turned out perfectly. Added Zest of lemon with the fresh blueberries amazing recipe. Thanks .
If you want to avoid this, toss blueberries in 2 Tablespoons of the recipe’s flour first. It prevents them from sinking and turning whole batter from becoming purple.

@@nitasaigalif the blueberries are sour, then I would reduce the amount to 1 cup....or stir the blueberries in 2 tbsp of sugar just before mixing them in with the cake batter. If you have blueberry filling then I would do layers. Place 1/2 cake batter, then spread about 4 tbsp of the filling on (if the filling is sour, then sprinkle a little sugar on it), then rest of the batter....and another 4 tbsp filling on top with a few tsp of granulated sugar...bake until inserted pick comes out clean. I make this cake with cherry filling and it’s delicious too! 😋. Happy baking!

@@TracysHomeGarden dear it came out well, thers no option to post the pik else wud have posted, but one problem my blueberries were quite sour in taste n we dont get i thnk gud blueberries here in india, i tried on amazon for frozen ones but not found, can u suggest how can i mke it with blueberry filling that we do get here , thanks in advance
@@nitasaigalif the blueberries are sour, then I would reduce the amount to 1 cup....or stir the blueberries in 2 tbsp of sugar just before mixing them in with the cake batter.
If you have blueberry filling then I would do layers. Place 1/2 cake batter, then spread about 4 tbsp of the filling on (if the filling is sour, then sprinkle a little sugar on it), then rest of the batter....and another 4 tbsp filling on top with a few tsp of granulated sugar...bake until inserted pick comes out clean. I make this cake with cherry filling and it’s delicious too! 😋. Happy baking!
