This IS the textbook. Timing is a great because this week I’m making turtles. Until now I wasn’t sure how much caramel to drop or even how to lay out the pecans. I’m glad this olden days video came across my stream. 👍🏻
Belatedly, but trick I do at home for the caramel pouring is a good large glass measuring cup, lightly cooking sprayed to keep things from getting sticky. Also, spray a spoon and that was my funnel and stick. Works really well. If it's cold out, give the measuring cup a bit of a warm up in the microwave to prolong caramel gooeyness.

Watching your turtle videos got me in the mood to make some for this past Christmas. I have a place here that sells those 5 pound blocks of caramel, my microwave has a caramel melting setting. I am hooked! So yummy and friends and family that I shared them with really enjoyed them! Thanks!
i have a little trick for you. Dip the very bottom of your ladle in the liquid you transfer and it won't drip for a few seconds giving you the time to transfer without a mess ( a cook trick for sauces and soups ).
