Ingredients:
Eggplant - 2 pcs.
Onion - 1 pc.
Tomatoes - 400 g
Oregano - 1 tsp
. Basil - 1 tsp
. Salt, ground black pepper - to taste
Cheese - 120 g
Garlic - 1 clove
1. Cut the eggplant in half. Cut out the middle. Brush with vegetable oil, season with salt and pepper. Bake for 15 minutes at 200 °C (390 °F).
2. Finely chop the onion and eggplant. Fry the onion in vegetable oil until soft, add the eggplant and fry for another 10 minutes.
3. Add tomatoes, oregano and basil, chopped garlic and sugar.
4. Divide into 4 parts and put the filling on baked eggplant boats.
5. Put the cheese on top and bake for another 7-10 minutes.
