I was so afraid to tackle it came across your videos look through them, you're so freaking friendly I pull out my machine, I had all the ingredients followed ever step you made. The bread came out wonderful, I'm over the moon. My son gave me the bread machine and he got to eat the first slice he loved it. Thank you. This house was definitely a fixer upper (1964) when we bought it in 1998 from the original owner. We lived with it for 9 years and were finally able to remodel the kitchen and bathrooms. I’m so glad we did it that way because anything turnkey was beige and brown. Not my colors! I love my counterspace!
OMG! Vanilla egg bread! That sounds amazing. I'll bet it makes absolutely wonderful French toast. I really enjoyed seeing the difference between bread baked in the oven and bread baked in the bread machine. I prefer to bake my bread in the oven, but on a hot summer day, baking in the bread machine keeps the heat down in the kitchen. Also, there are times when it's just more convenient to bake in the bread machine--like holiday dinners when the oven is busy at a different temperature, and baking in the bread machine means that I don't have to babysit the bread.
Thanks for giving us a side-by-side comparison. I've been using my Hamilton Beach bread machine for about 1 1/2 years, and have never tried the dough-only, then classic oven baked bread pan loaf. I love the look of the oven baked one that has the egg wash on it. That recipe is a delicious sounding improvement to the standard white bread recipes.

I love my Jammies! They are from Soma, which is an offshoot of Chico’s. They are called “Cool Nights” because the fabric keeps you warm but not overly so. They are perfect for Southern California winters.

Japanese white bread, shokupan, is very tall and sliced thick - makes sense that the Zo machines make bread this shape. On iphones, the bread emoji, designed in japan, looks just like a loaf from a Zojirushi! :)
I just bought this ZO V+, and am in love with it!! I am NOT a lover of being in the kitchen, but this makes such wonderful bread with such ease, it's awesome!! I did want to note, however, I found out from other YT vids, that, if you make sure your paddles are pointing in the same directions before you add ingredients, the shape of the loaf is much more consistent. Thanks for sharing!!
Paddle placement is a myth. I figured as much, but I wrote to Zojirushi to make sure. Alignment of paddles does nothing. I even tried it. I put my liquids in and they move anyway! E Enjoy your ZO! I have lots of good videos here on my channel!
If you make sure that the paddles are pointed in the same direction before adding the ingredients the loaf will not be misshapen... give it a try! Loved your demo!.
Thank you!! That is a myth. I even emailed Zojirushi. I have tried it three or four times (before I asked them) and it never worked. It’s just how the dough lands at the end of the final rise. There’s no mechanism that shapes the loaf. It can also mean the dough is too wet.
Great video and lovely recipe. I love the side by side comparison. Since this video is 3 years old, you probably know by now that the paddles need to be in the same direction for a perfectly shaped loaf. Never will you ever have to reshape the loaf in the machine. Thanks for also explaining the difference between the SAF yeasts.
Hi Lisa! Paddle alignment for loaf shape is a myth. When people started talking about it I wrote to Zojirushi and they told me so. Lopsided loaves are caused by other factors. I tried the alignment myself several times because people were so adamant and it made no difference. I always had lopsided loaves. Many people reshape the dough and remove the paddles before final rise. I always use the dough course so this issue doesn’t matter to me.

Yes! Here is the recipe! Sweet Milk and Vanilla Bread by Ellen Walker Hoffman Make in a 2 pound capacity bread machine on dough course. This is a yummy twist on a basic white bread. The milk and egg make for wonderful flavor and a tender, soft crumb! 236 g milk 1 egg 9 g vanilla extract 492 g bread flour 50 g sugar 5 g salt 75 g butter 6 g SAF INSTANT YEAST *try orange zest or other flavorings I use the dough cycle. Dump out of bread pan onto oiled or lightly floured cutting board or solid surface. Shape and put in loaf pan sprayed with nonstick spray, lined with parchment. Turn on oven to 170 and turn off in one minute. Let rise in the slightly warmed oven for 45 minutes. Take out, preheat oven to 350. Egg wash and bake for 30-40 minutes until inner temperature reaches 190-200 degrees . (Watch after 20 minutes to make sure it doesn’t get too brown. Cool 2-3 hours, slice, put in heavy duty plastic freezer bag and freeze same day as baked to preserve freshness. Take out slices as needed to defrost or toast.
Try lining the paddles up going in the same exact direction prior to adding ingrendients to avoid the uneven loaf. I have this machine and as long as I do that - they're uniform!!

I noticed at 32:48 that your cutting board wiggled around a lot. A trick is to wet a wettex, squeeze the water out and place it under the cutting board. That way it will firmly sit in its place helping with the cutting.
Great video! I wonder if you splashed more vanilla into one or the other since you don't measure? Or the egg wash affected the taste? I love the convenience of not using my big oven to bake a loaf of bread. Like you said, esthetics are personal, and don't really bother me at all., but your shiny oven baked loaf was stunning! Looks wonderful I am looking for a new bread machine. This one is winning so far. Also, when using your cutting board put a damp towel, paper towel, dish rag, etc. under and your board will not slide around.

Interesting for sure, I must say the oven version looked like a shop one and the bread Machine one well looked like bread Machine bread looks a little rough and ready. But sure both are fine once made to a sandwich. Thanks for the great video and information just learning to use bread Machine. I will be doing the Dough version for my bread and bake in the oven. I will now store my yeast in the freezer.
I get this question a lot! I like to bake a lot at one time and get it into the freezer. One day of baking, one mess! Also I bake for friends and family. At Christmas I make pans and pans of cinnamon rolls. If I start early in the day, I can make six batches in a day. I prefer to cook and bake in bulk and freeze it.

Hi Kat. You would take the paddles out just before the final rise. That being said, this is not something I do. My bread machine directions don’t mention it and I’m not sure it’s the right thing to do for my bread machine. I rarely bake in the machine anymore but when I do, the holes don’t bother me. Once you slice the bread they mostly vanish. Using dough course solves this and other problems with shaping, crust toppings, etc.
@@krism2746 Sometimes the dough could have been too wet or too dry. That wasn’t what happened here. Honestly, it happens because the dough landed that way, slightly uneven, went through a last rise, and baked that way.

Thank you for the comparison video. I think I will be using my machine for the dough feature and then baking off in the oven. To me it just looks better. I do have a question for you. You have stated you own the Breville that has the proof option but you seem to use your oven. Is there a reason for this? I bought the Breville for many reasons after much research but was so happy it had the proof option. I am looking forward to getting finished with the redo on my kitchen so I can get all my toys out to start baking. LOL

@jeanegard It’s kind of a long story!😜 I had a Home Bakery Supreme for 20 years, then it died so I got a Virtuoso Plus in summer 2018. I loved it and my skills and recipe creation really took off. My dad found an old Oster bread machine in the garage and asked if I wanted to play with it. I cleaned it up and began to use it. I loved having two bread machines because I could make more dough at once-time and energy (and clean up) efficiency are kind of my thing. What I didn’t love was the Oster! It didn’t have the rest in the beginning, it was vertical with one paddle (yuck!), and just didn’t make dough as nice. I said to my husband, “It’s so nice to have two bread machines but I wish I had another Zo instead of that Oster! Hanukkah came and my sweet hubby presented me with another Zo!!!! I had three bread machines until the Oster danced off the counter and into my arms. I had to stand there until it finished the dough course, then out to the trash it went. I waited several months until there was a really good sale, and bought myself a third Zojirushi Virtuoso Plus. I have “baking” days and make three loaves/batches of dough all at once. It’s very helpful and time efficient, but I have to stagger the times so I don’t have more bread to bake than ovens. Only one mess on one day! I also have a Zojirushi Maestro-a one pound machine so I can help my bread friends with smaller machines use my recipes.

I thought I answered this. Weird. I have three so I can make three loaves of bread or batches of dough for cinnamon rolls, for example, at once. It’s more efficient., I didn’t set out to have three! I had one, and after about 18 or 19 years it died. I bought a new one. Then my dad found an old Oster in his garage. I cleaned it up and used it, but I hated that it was different from my Zo. It walked off my counter! I kept telling my husband how I loved having 2, but wished they were the same. He bought me one for Hanukkah and that made two. I threw that horrid old Oster in the trash. Some months later I decided I wanted a third and began to watch the prices. I bought the third when the price went down. I sometimes wish I had 4, but I’m not going there!
Noticed on several of your videos that after you finished using your Zojirushi Bread Maker you immediately disconnect it from the outlet. Is there a reason why you do that ? Thanks for great videos !!
Good eye! Yes, In the instructions for my bread machine it says to press cancel and unplug the machine when your bread or dough course is complete. I’m just following directions! No reason for it to stay plugged in!
I have this dough going now, want to make 2 one pound loaves, what do you think for baking time? Had to sub almond milk, google said it was OK, I guess I'll find out :)
I’ve never used almond milk as that would literally kill me. I’m allergic to tree nuts! You can definitely sub liquids, but if the almond milk contains sugar, you may have to use less sugar. Baking time will be 25-40 minutes. Cover the tops if they get too brown. Use your instant read thermometer to make sure inner temp is 190-200 degrees. With this recipe, closer to 200 is best.
Hey Ellen New to your channel and love it.I’m a bread machine maker. Not new to bread machines. Have had a few different brands. I do have a question.Why do you have so many bread machines. The brands we have are expensive and I can only afford one.
I didn’t get them all at once! The first replaced one I had for about 20 years. The 2nd a gift, then I wanted one more so I waited for a sale and got one at a very good price. Here’s the explanation.
Mrs. Ellen, I am trying to learn grams and I am like so totally confused..example 1 cup of bread flour is 120g then shouldnt 3 cups be 360g because when looking up I get that the 3 cups are 408g. All the websites I visit are so off..I dont know what to trust.
It really depends on your brand of bread flour. I use King Arthur bread flour and that seems to measure at between 130 and 135 grams per cup. I’m going to link you to my videos that will help you. I’m linking you to three videos. Watch them all and you’ll be less confused!

That is a myth someone started and perpetuated. When people started writing that in groups, I was curious so I wrote to Zojirushi to ask. It does nothing. I still have the letter saved.
My machines mix perfectly. I don’t need to change a thing. I tried aligning the paddles once just for the heck of it. It made absolutely no difference. In fact, the paddles moved as I added ingredients anyway. If you feel it makes a difference, you do you. We all have our little routines that make us comfortable. There are things I do that I may not really need to but that is my routine. Happy Baking!😘
I’m a new subscriber and just wanted to let you know how much I’m enjoying your videos. You’re so informative and playful, that your videos are just fun to watch. I’ve made my first two videos in my garage sale bread machine. It’s an old Welbilt model. I’ll have to make do with it since I can’t afford a new one, but my loaves didn’t rise nicely. They kind of dipped in the middle. They baked fine (good crumb), but I’m wondering-do you think the problem may have been the wrong yeast? I used a recipe from another channel and he used rapid rise yeast or something. I don’t have that. I only have the SAF instant. I used the same amount as his recipe called for. I didn’t use your recipe because it called for “bread flour” and mine is all-purpose. Can I use that…? (Sorry for the long comment. I’m gonna experiment with your recipe to see if my flour works….) And thanks for your VERY helpful videos. (I’m new to bread baking this year and have only just begun to use a bread machine.) I love making my own bread, but I have a lot to learn. 🥰❤️
Welcome Carol! You do really need to get King Arthur Bread flour! It will make a huge difference. That plus the SAF instant yeast is a sure thing! Make sure you’re keeping the yeast in the freezell

I noticed at 32:48 that your cutting board wiggled around a lot. A trick is to wet a wettex, squeeze the water out and place it under the cutting board. That way it will firmly sit in its place helping with the cutting.
I usually put a silicone trivet under.
Great video! I wonder if you splashed more vanilla into one or the other since you don't measure? Or the egg wash affected the taste? I love the convenience of not using my big oven to bake a loaf of bread. Like you said, esthetics are personal, and don't really bother me at all., but your shiny oven baked loaf was stunning! I use a toaster oven, so the slices fit in just fine for me! Thank you so much for doing all the work for this side by side!
Actually for this video I weighed 9 grams of vanilla for both batches. I don’t think the egg wash gets past the top crust.

Interesting for sure, I must say the oven version looked like a shop one and the bread Machine one well looked like bread Machine bread looks a little rough and ready. Why do you have so many bread machines? I just purchased my first Zojirushi virtuoso plus. My old bread machine is over25 years old
I get this question a lot! I like to bake a lot at one time and get it into the freezer. One day of baking, one mess!
Also I bake for friends and family. At Christmas I make pans and pans of cinnamon rolls. If I start early in the day, I can make six batches in a day. I prefer to cook and bake in bulk and freeze it.

Just curious, at what point can you stop and take the paddles out so it won't have those big holes in the bottom of the loaf?
Hi Kat. You would take the paddles out just before the final rise. That being said, this is not something I do. My bread machine directions don’t mention it and I’m not sure it’s the right thing to do for my bread machine. I rarely bake in the machine anymore but when I do, the holes don’t bother me. Once you slice the bread they mostly vanish. Using dough course solves this and other problems with shaping, crust toppings, etc.

@@krism2746 Sometimes the dough could have been too wet or too dry. That wasn’t what happened here. Honestly, it happens because the dough landed that way, slightly uneven, went through a last rise, and baked that way.

Thank you for the comparison video. I think I will be using my machine for the dough feature and then baking off in the oven. To me it just looks better. I do have a question for you. You have stated you own the Breville that has the proof option but you seem to use your oven. Is there a reason for this? I bought the Breville for many reasons after much research but was so happy it had the proof option. I am looking forward to getting finished with the redo on my kitchen so I can get all my toys out to start baking. LOL
The loaves are too tall to bake in the Breville-they almost reach the top even with the lowest rack placement. Proofing in it is good!

@jeanegard It’s kind of a long story!😜 I had a Home Bakery Supreme for 20 years, then it died so I got a Virtuoso Plus in summer 2018. I loved it and my skills and recipe creation really took off. My dad found an old Oster bread machine in the garage and asked if I wanted to play with it. I cleaned it up and began to use it. I loved having two bread machines because I could make more dough at once-time and energy (and clean up) efficiency are kind of my thing. What I didn’t love was the Oster! It didn’t have the rest in the beginning, it was vertical with one paddle (yuck!), and just didn’t make dough as nice. I said to my husband, “It’s so nice to have two bread machines but I wish I had another Zo instead of that Oster! Hanukkah came and my sweet hubby presented me with another Zo!!!! I had three bread machines until the Oster danced off the counter and into my arms. I had to stand there until it finished the dough course, then out to the trash it went. I waited several months until there was a really good sale, and bought myself a third Zojirushi Virtuoso Plus. I have “baking” days and make three loaves/batches of dough all at once. It’s very helpful and time efficient, but I have to stagger the times so I don’t have more bread to bake than ovens. Only one mess on one day! I also have a Zojirushi Maestro-a one pound machine so I can help my bread friends with smaller machines use my recipes.

I thought I answered this. Weird. I have three so I can make three loaves of bread or batches of dough for cinnamon rolls, for example, at once. It’s more efficient., I didn’t set out to have three! I had one, and after about 18 or 19 years it died. I bought a new one. Then my dad found an old Oster in his garage. I cleaned it up and used it, but I hated that it was different from my Zo. It walked off my counter! I kept telling my husband how I loved having 2, but wished they were the same. He bought me one for Hanukkah and that made two. I threw that horrid old Oster in the trash. Some months later I decided I wanted a third and began to watch the prices. I bought the third when the price went down. I sometimes wish I had 4, but I’m not going there!
Noticed on several of your videos that after you finished using your Zojirushi Bread Maker you immediately disconnect it from the outlet. Is there a reason why you do that ? Thanks for great videos !!
Good eye! Yes, In the instructions for my bread machine it says to press cancel and unplug the machine when your bread or dough course is complete. I’m just following directions! No reason for it to stay plugged in!
I use the dough cycle, and bake in the oven. I'm not a fan of the 'thicker, harder' crust when i bake in the machine. Personal preference.
I always use dough course as well.

I have this dough going now, want to make 2 one pound loaves, what do you think for baking time? Had to sub almond milk, google said it was OK, I guess I'll find out :)
I’ve never used almond milk as that would literally kill me. I’m allergic to tree nuts! You can definitely sub liquids, but if the almond milk contains sugar, you may have to use less sugar. Baking time will be 25-40 minutes. Cover the tops if they get too brown. Use your instant read thermometer to make sure inner temp is 190-200 degrees. With this recipe, closer to 200 is best.

Mrs. Ellen, I am trying to learn grams and I am like so totally confused..example 1 cup of bread flour is 120g then shouldnt 3 cups be 360g because when looking up I get that the 3 cups are 408g. All the websites I visit are so off..I dont know what to trust.
It really depends on your brand of bread flour. I use King Arthur bread flour and that seems to measure at between 130 and 135 grams per cup. I’m going to link you to my videos that will help you. I’m linking you to three videos. Watch them all and you’ll be less confused!

You will get a better mix if you align the flippers.
That is a myth someone started and perpetuated. When people started writing that in groups, I was curious so I wrote to Zojirushi to ask. It does nothing. I still have the letter saved.

My machines mix perfectly. I don’t need to change a thing.
I tried aligning the paddles once just for the heck of it. It made absolutely no difference. In fact, the paddles moved as I added ingredients anyway. If you feel it makes a difference, you do you. We all have our little routines that make us comfortable. There are things I do that I may not really need to but that is my routine. Happy Baking!😘
I’m a new subscriber and just wanted to let you know how much I’m enjoying your videos. You’re so informative and playful, that your videos are just fun to watch. I’ve made my first two videos in my garage sale bread machine. It’s an old Welbilt model. I’ll have to make do with it since I can’t afford a new one, but my loaves didn’t rise nicely. They kind of dipped in the middle. They baked fine (good crumb), but I’m wondering-do you think the problem may have been the wrong yeast?
I used a recipe from another channel and he used rapid rise yeast or something. I don’t have that. I only have the SAF instant. I used the same amount as his recipe called for.
I didn’t use your recipe because it called for “bread flour” and mine is all-purpose. Can I use that…?

Welcome Carol! You do really need to get King Arthur Bread flour! It will make a huge difference. That plus the SAF instant yeast is a sure thing! Make sure you’re keeping the yeast in the freezell

Quit opening the doors...you are letting heat out. I would not have egg washed one if you are trying to do a comparison.
I have to check for temp to see if if it’s done. The egg wash is only cosmetic on the top. It has nothing to do with how the bread baked.
