It would fill the space with water when you submerge it (hence the bubbles escaping the bag) but it doesn’t balloon out because you zip it before you lift it out

In a freezer bag with water so their wouldn't be any air. Taste was not good when I unfroze it

What is the brine you use to soak the fish before locking the bag?
brine is just saltwater. All you do is pour salt into the ice water bucket and stir it around. BOOM. Got your brine. That’s literally all “brine” is.
