Butterbur, the Original Eco Food Wrap?

  • As its name suggests, the large leaves of Butterbur were used to wrap butter in olden times. Butterbur does have medicinal properties but isn't used so much these days because it contains some toxic alkaloids that can damage the liver. Medical herbalist Keren Brynes MacLean explains it's one you probably want to avoid when out foraging.

    The butterbur I find in Japan has rather small leaves. It is called fuki no tou and possibly also bog rubarb. In early March, the plant puts forth flower buds and these are often eaten in a few ways like by blanching in salt water and mixing with miso paste or in a fried tempura style. Young leaf stalks are also peeled and cooked as a side dish.

    I’ve just started taking butterbur as a supplement to help me with my migraines. I didn’t realize the leaves from the plant were so large, that’s quite impressive!

      I’m growing butter bur and the mail lives ere double size then female and flowers are yellow female is pink

      It's a great video, I like a lot the exemplification of the hat ahahah. Tho I'd like to hear more if the stem can be eaten and how.
