TASTY CHICKPEA SALAD - WITH OLIVES AND RED ONION

  • In today's video, you'll learn how to make an incredibly flavorful and easy to prepare chickpea salad.
    Macros
    Makes 2 servings
    Macros per serving (2 servings)
    Macros: 512
    Proteins: 18
    Carbs: 64
    Fats: 23
    Ingredients
    For the salad
    2 cups cooked chickpeas
    1 cup of green olives
    ¼ cup green capers
    1 red onion
    4 tomatoes
    ½ cucumber
    1 bunch fresh parsley
    Zest of 1 lemon
    Sea salt
    Black pepper
    For the dressing
    Juice of 1 lemon
    2 tbsp olive oil
    Instructions
    Rinse the chickpeas, set them aside.
    Chop the onion, tomatoes, cucumber into small dice. Chop the parsley.
    Add the vegetables, parsley, chickpeas, olives, and capers to your salad bowl. Add the zest of 1 lemon on top.
    Sprinkle coarse sea salt and black pepper on top.
    Add the lemon juice, olive oil, mix well.
    Enjoy.

    Any substitutions for the oil that you recommend? Looks delicious but im working towards oil free. Thanks for the video!

      Sure! You can simple leave it out, maybe use a little soy sauce for added umami, take lime juice instead of the lemon. The other ingredients are packed with flavor already, especially the onion and olives, so you might not even notice the lack of oil. Play around with flavors you like
