🇻🇨St Vincent/Caribbean Pig Feet Souse

  • Enjoy with Roasted breadfruit, boiled green bananas, dumplings, sweet potatoes, by itself, and much more.
    Recipe
    Pig feet
    Cilantro/you can add parsley as well
    Red bell pepper
    Garlic
    Onion
    Thyme
    Scotch bonnet pepper
    Black pepper
    Lime
    Lime juice
    Vinegar
    *Wash your vegetables throughly before cooking.
    *If you are using the salted pig feet boil it until it is tender. After the second boiling you add some fresh water to the stock and add your ingredients.
    *If you do not want to cook your vegetables and herbs down, you can put it directly into your pig feet after taking it is cooked.
    *Serve hot or cold whichever you prefer.
    *You can make this with chicken feet, cow feet, conch, black fish, etc.

    My mom was from SVG (Gibson family from Calliaqua) and I’ve been looking for a good souse recipe for a while to take me back to my childhood. This video does it, I can’t wait to introduce my children to the dishes of my youth. Thank you from Naples, FL USA

    my uncle was from Barbados and he passed away without leaving his recipe for this but yours is so close to his, currently making now only difference is he cooked feet in season then drained and added hot water to veggies on side then added feet back in and let it sit for 3 hours, but definitely can't wait to see how it turns out

    Its done different in other islands..the seasoning is pickled and bonnie 🌶...then add the cooled pig foot, other parts of pork along with cucumber 🥒 Its served as a cold dish.
    I will try your method... its yummy other way its done.

      @@samsgiftedhands3998 ok..also I ever though of putting some pineapple chunks into souse when leaving it to marinate overnight after cooking, u can use the canned version along with sweet coconut dumpling, breadfruit, sweet potato and sweet corn...its really good!

      You are welcome! Do not put too much lime juice and vinegar when you are doing it. I was trying to measure but I seriously do not measure when cooking.🙃

    Can I ask why you discard water from first boil ? Does that takes the hairs away? I was struggling with that the other day lol.. thanks for this btw ;)

      I discard the water because it's a custom we do. Also, we like to discard the foam and remove the excess fat from that first water. You are welcome!

      @@samsgiftedhands3998 cool i will try that next time.. so far I've only ever boiled up to get the gelatine for making sauces and curries etc , forbtje goodness and consistency they give.. I've been giving the rest to my cat and dog lol ... I'm gonna try make up some feet like this and also was watching a crispy pig food video with a Thai boy cooking looked really yummy with spicey sauce and salad 😋

      If using the salted pigs foot , discarding the first batch of water helps reduce some of that extra salt that they use to preserve the meat. Plus the extra scum that floats at the top when boiling to soften the meat. Some people use a clean razor or sharp knife to help take the extra hair off before cooking during the washing /cleaning process, it can also be done after softening the meat and rinsing off the impurities before the final preparation of the souse (pickled meat) .

      Boil the pigtail until tender. Don't boil out all the salt, leave some flavor in it. Then you can put water, lime juice, cucumbers, onion, bell peppers, etc.

      @@b.freeman2118 yes, boil it twice and remember to cover pig tail with water. You can always feel it to see if it is tender. About 45 minutes boiling time but check for readiness. Yes, used the same method and becareful with the amount of salt since the pigtail will have salt in it.

      @@samsgiftedhands3998 Now try cooking a Dolphin head boilene with 2 full not ripe scotch bonnet, some shadow benie onion and a green pepper for color. and if you have, 2 green banana for extra flavor. !! make a small ball of fungi with young baby okra
