Great laptop, bought one a couple of months ago almost identical, went with i7 1365U vPro, 32GB, 1TB SSD, Smart card, NFC, Backlit Keyboard, 500nit touch screen, upgraded battery, much quieter and cooler than my previous X13 Gen 3.

This laptop is on my shortlist. Since I'll be working mostly with two external displays, the brightness is not really my concern, however, thermals are. By doing basic work like web browsing, watching RUclips videos etc., do the fans kick in soon or is the laptop quiet until you really stress it?
It really depends on your environment (do you have AC working or are you outside?) and the tasks you're doing. I think with what you've mentioned, you should rearly hear the fans working. Sometimes youtube could accelerate the on board GPU, but that like with any other laptop. 🙂 Go with 'normal' or 'power save' battery scheme and you should be good!
Is this device good for studies in cybersecurity installing some software in Vmware and make labs doing some pentesting or cracking wifi passwords etc as well installing windows server at vm for study purposes
It is a good device, but for what you're looking for, I would suggest a P1 G6 if you have the budget. I also have a review for it if you're interested.

How does it compare to an M2 or M3 Macbook? As a long term Thinkpad user I am seriously considering switching for the better screen, superior battery life and ARM architecture.
Between 14" ThinkPad 7840U and HP 14" Firefly / Elitebook 7840U, which is less uncomfortable to use under long multi hour render. They probably both get too hot for comfort.
AMD scores higher in those tests and comes at a cheaper price... I think its insane that the intel has fallen behind like that with their integrated graphics and multi core performance. When you pay a higher price you expect to get something worth the money. Thanks for the review.
You forgot test battery life time. It is very important for me. I heard Intel are very power xonumign and amd are better in terms of battery life. Can you test it?

Mine it about 3-4 hours without any problem. It's great, but not Apple grade...

Is this 400 nits display?
I have Lenovo t410 and for home usage it's more that enough.
I thought that 400 nits should be OK for outdoor use

There are basic options, such as FHD without touch screen 😊
