I love your cooking shows; John from Kanyakumari; love your voice, love your dressing-style, love your glasses, and love, love, love your posts and pans.
I watched your video earlier and i saved it on my playlist. Your pickle is very much like the one my mother used to make many years ago . She was from Durban South Africa though not of Indian origin but she was famous for her Indian food. I have been to the Supermarket and bought the ingredients and now I'm going to have a go. Thanks for sharing your knowledge I appreciate it . I'm subscribed.
Hi, Vinegar acts as a preservative and flavoring agent, but in Indian pickles or achaar as we call, uses oil and salt which helps in preservation, spices add in the flavors. Hence, vinegar is not added.

Thanks for the recipe. Looks doable and I shall try it. One question, @4:45 after giving it two days in the sun, we have to preserve in fridge is it?
Very nicely explained Sir.Can we use pepper instead of Red Chilly powder.

Question: there isnt much sunlight right now, could I use full spectrum terrarium lightbulbs instead? what is the mechanism behind the exposure?
Skip the sunlight -- go directly to refrigeration -- it still works out beautifully.
Hello Chef, can this pickle be made without Rai kuria?

Don't we need to wash the vegetables?
