I like the chunkier slices of zucchini. My mom always cut her slices so thin so everything became really mushy. I think the thick slices is an awesome level up. 👍🏻
Such a great way to cook courgette. They can take so much browning and taste great. When thick cut and covered like that they are nicely cooked too. Great summer dish.

I'll give you some advice. The burth canal isn't supposed to accommodate extra large zucchinis. Next time you watch corn, pay attention to the woman's face. That's not pleasure. you'll see that pain in it.
I don't buy zucchini very often because I don't like the texture when it gets kind of mushy. I wonder if we slice the zucchini thinner than she did we might get a crisper experience.

I found this recipe two years ago where you shred 2-3 zucchini and pan fry it with shallots and garlic for about 30 minutes until it becomes like jam, add your favorite pasta, a little pasta water and it’s one of the best pasta dishes. I also sometimes add grilled scallops if I’m feeling a little less vegan that day 😬
Is this enough to fill your stomach as a main dish? I always wonder what I could make as main dish with only vegan ingredients and it's pretty difficult

I just cook it, add salt & pepper- its perfect by itself. I do like sauces, but its a simple but delicious veg on its own.

I prefer puting them in a lil siced up potato starch and then fry for a crispier feel and i make a dip with soy and chili crisp instead. Good snack.

Olive oil - extra virgin oil - becomes rancid if you cook with it. You should always use olive oil made for cooking.
