I like the chunkier slices of zucchini. My mom always cut her slices so thin so everything became really mushy. I think the thick slices is an awesome level up. 👍🏻

I found this recipe two years ago where you shred 2-3 zucchini and pan fry it with shallots and garlic for about 30 minutes until it becomes like jam, add your favorite pasta, a little pasta water and it’s one of the best pasta dishes. I also sometimes add grilled scallops if I’m feeling a little less vegan that day 😬
I'll give you some advice. The burth canal isn't supposed to accommodate extra large zucchinis. Next time you watch corn, pay attention to the woman's face. That's not pleasure. you'll see that pain in it.

I don't understand how people can eat so little... I always make sure everything I cook has the right macros and calorie content. Along with protein I probably eat one pound of vegetables a meal to feel full lol. One zucchini with a little sauce on top is no one where near enough to satiate my appetite.
😢Less is LESS. Zucchini are mostly water and you don't even have a full one on your plate. This is a side dish at best and needs protein and carbs, like beans, tofu, pasta. Otherwise it's just pro ana

I just cook it, add salt & pepper- its perfect by itself. I do like sauces, but its a simple but delicious veg on its own.
