- "Summer on a plate" This gorgeous old fashioned "dairy-free" English dessert that showcases the season of delicious berries creating a simple pudding perfect for those long summer days. A 19th Century healthy alternative to the rich, stodgy puddings gracing the table. Referred to as the "Grease Pudding" amongst Buckingham Palace chefs.

A lot of people seem to oppose the idea of summer pudding because ‘soggy bread’. I can tell from this that they haven’t had one. It doesn’t taste of wet bread at all, it is really delicious especially with some cream.
A lot of those people apparently don't know what bread pudding is made of... lol
achanwahn You can’t blame them.
People seem to think the same about tres leches cake. My english teacher from middle school seemed disgusted when I gave a piece to her to show my appreciation and she even said it was soggy like wtf. Some people are just ignorant like that.
@@aguilarsquad4086 they are ungrateful of your efforts
seems sort of like an inverted strawberry short cake😍
My two year old came in right as he was turning it out, and started yelling "I want some! I want some!"
I don't think she understands how RUclips cooking shows work....
Lolz
Cute reaction!
Hope you got around to making one for the both of you! 😁
Made this using slices of a lemon pound cake instead of bread, we were out of bread, he is right the vanilla bean paste makes all the difference and I served it with a scoop of vanilla ice scream and the mint leaves, it was such a hit with my family !
I love a summer pudding, and the first time I had it, I believed that the white bread was vanilla poundcake. Anyone who thinks this might taste of fruit soaked bread has 100% never eaten it. Hands down, one of my favorite puds whenever I am someplace that has berries in season! And like Chef McGrady, I enjoy it with a drizzle of unsweetened cream. Anything else is too, too sweet.
I’ve done this instead of bread I use angel food cake mmmmm so good!
That sounds delicious
To me, too!
That sounds much better than bread!
Question! Was the Angel cake old or frozen a little? Thinking about making this
@@princessazulaofthefirenati5870 it was store bought not frozen
I'm from Piemonte, Italy, my grandma's best friend was from England she would come the summer, they both were great cooks and always made this, they used to put custard cream together and crumble.... so good
Thank you. I hate the perception that English food is bad. It may not be as sophisticated or technical as Italian, or French food, but stuff like this is bloody delicious
Thermal completely agree, English cuisine has a very undeserved reputation, on the other hand whomever is exposed to the good one can’t deny it.
"Wholewheat bread, don't even get me started on that" That had my dying :)
Me too!
Oh I *want* to hear him on the topic of whole wheat bread! LOL
I’ve used it and it works
But homemade brioche flavoured with vanilla was the best
Thank you Darren Mcgrady for your summer Pudding recipe I love it 😀 god willing next week I am going make the recipe for myself, and I will let you know how was the taste .
Hi Darren, I wanted to tell you how much I love your videos. I grew up in Ascot, England as a child and then moved to America. Your videos of you cooking English dishes remind me of my childhood and are very comforting to watch. I really love the one of Princess Diana and her stuffed bell peppers, sounds lovely. Do you ever make fresh pasta? I'm really interested in Italian cooking and have had difficulty with the consistency of fresh pasta dough. I would love you to do a video all about making fresh pasta if it's a possiblity. Please keep creating. Your cheery and enthusiastic personality would lift anyone's mood.
Tried this yesterday with some variations. (Being in quarantine we make do with what we have.) I'd made some pound cake that turned out to be very dry, so I trimmed and sliced it thin to substitute for the bread. For the syrup, I had excess homemade raspberry sorbet that I melted in the pan before simmering the fruit. No blackberries but I had some fresh peaches, strawberries and raspberries. You are right - be sure to not overcook the fruit. Lesson learned. Very tasty, but I think bread would result in a much lighter pudding.
This channel is so wholesome and I love it
Just made this last night for the family. My kids are wary of my experimental recipes, but this one was a hit. There is nothing left. Absolutely fabulous flavor, even with berries and fruits available in the winter. Thanks for sharing the recipe!
I'd listen to this man for hours.
This is what I have been looking for since 1996. Thank you so much.
You're welcome!
I love watching you cooking, I can feel all the happiness you feel while you prepare each dish. You are a special royal chef. Xoxo. ❤
I visited England 3 times and loved the light fare of the desserts. I throughly enjoyed making and eating Summer Pudding! The children loved it too! Your channel has been my Saturday morning holiday with a cup of tea. Thank you for your jovial and inspiring personality! So refreshing! No wonder you stayed a royal chef for so long! Thank you and keep the desserts coming!
One of the joys of living in CA is that strawberries, raspberries, blackberries, and blueberries, and cherries are available fresh the whole year long at quite reasonable prices, even when cherries are imported from other countries.
But you don't wrap them in wet bread do you? Honour them with a little bit of cream, nothing more needed.
@@maureendavidson4635--Sometimes even a bit of cream is overkill. I prefer nibbling on summer fruits just as God made them...washed, drained, and simply luscious.
I have made this several times, its easy to make and so good. ❤ thank you, Sir
I love how humble British food is. Even the food for the royals is quite humble.
I’m an aspiring chef I wrote this recipe done and made a couple of times it looked amazing and tasted it too your a real inspiration to me thank you
I wish I had the money! I was excepted in Le' Cordon Blu' but didn't have the finances to go :( Thank you! I am coming off of a very heavy depression and I have always wanted to be a chef! Hopefully one day I will be one!
Take some student loans and GO! Love your dream!
Looks really good and healthy for a dessert in the summer! Love the close ups while your cooking and the layout of your kitchen. Your videos have improved so much over the past several weeks.
Absolutely love watching you chef!! You make such complex dishes look so easy and simple to make.
Gracias Darren. Saludable y de lo más delicioso.
Ashamed to say I've never tried a summer pudding 🙈 but I want to now! Watching your videos makes me want to try everything you cook Or drink... 😀🍸🍹
This is one of my absolute favorites! I took it to my best friend’s family when she died of Covid. They loved it and I bought the stuff to make it for Easter…is us just amazing!!!
Sincere condolences on the loss of your friend.
I use to serve lavender ice cream with individual summer puddings when I use to put summer pudding on in the summer.
My Aunt would make this for us for breakfast when we visited in the summer as kids. Never thought of this as a dessert! 🤣
You are quite possibly the best chef and fit of chef in my head for a royal family. I just feel the Albert vibe for the Bruce Wayne.
Great Chef! Knows what he's doing, definitely worth buying the cook book for some amazingly tasty dishes.
Freeze one, have it for Christmas or whatever your winter fest is. So much better than a heavy Christmas pud! and a breath of Summer too
Great idea!
Absolute legend
Darren, thanks for reminding me of this outstanding dessert. An English friend of mine made this and served it with Creme Anglaise mixed with a dash of cognac. It - was - to - die - for!
Now that berries are coming into season I'll be making it myself.
This with custard or clotted cream is fantastic!
I do so LOVE a proper Summer Pudding!
I've just recently found your channel and love watching you work your magic. The recipes are to die for and my new word is "simply gorgeous". Thanks for sharing all this happy food!
Vanilla extract is fine - as long as you buy decent quality stuff. What appears to be really bad is vanilla essence, most of which appears to be a concoction of chemicals.
This looks amazing, although I hate soggy bread this _does_ look beautiful.
OK darren yes I adore summer pudding too, but also rhubarb crumble , bread and butter pudding, apple cinnamon pie, lemon meringue pie, sticky toffee pudding, my mum made a wonderful jam roli poli and so on paulax
I omit the strawberries as I am allergic, but I make Summer Pudding for Christmas here in New Zealand. We actually have it for breakfast - it's only fruit, bread and cream, after all! For a more unique festive touch, I use a Panetone - which does make it a dessert! One of my all-time favurites, too, Darren!
Using Panetone for this is genius!
@@deendrew36 I made it this way for my parents, one Christmas and they loved it. A lighter alternative to a good old plum pudding! I hope you'll try it! x
Perfect with clotted cream, a pot of tea and someone to share it with... _Sublime._
That looks amazing especially with the cream on it at the end.
That looks amazing, I'd definetely munch on that all day!
Lovely
Love the idea of putting a little vanilla bean paste in coffee. Going to try it. Thanks!
It looks so good. I'm hungry now
I miss my mum and her cooking!!!
This Summer Puddling looks delectable, so simple and easy to make. I really enjoy listening to you talk about your time serving the Royals, it’s so fascinating and intriguing. ❤️
Looks great Darren! The entire video I was waiting for you to bake it. I guess all great desserts don't require baking lol.
Classic dessert, reminds me of childhood at home in Cambridge, UK. Thanks!
Our summer dessert here in America is strawberry shortcake!!!!
Chef: makes this pudding in winter
The Queen: OFF WITH HIS HEAD!!!!!
Ya boi: mess up dat summer pudding
.
The Queen: Yo where mur Guillotine at fam ?? :y
Dear Mr. McGardy,
I'm enjoying your channel. This recipe sounds wonderful. I think it's worth it for me to try baking an organic loaf of white bread (commercial breads are hard on me). This recipe just looks so delicious! Thank you!
would have loved to be an apprentice under you back when you worked in the palace
I make my own Madagascar bourbon vanilla extract which has all the vanilla beans in it and it's ABSOLUTELY delicious!!!
I confess I've never liked the bread in summer pudding so I use sponge fingers instead - but no sugar in the fruit to compensate. Otherwise, I make it pretty much the same way.
You deserve way more subscribers keep up the good content
I appreciate that!
Your welcome
I make this and have always loved it. I use a steamed pudding basin as it’s a little larger and always turns out brilliantly. Thank you for showing this
That summer pudding looked delicious, o see why it's a RF summer favourite. I was thinking when you showed the variety of berries, how good the leftovers would be if someone used them as a compote over waffles , oatmeal or as you suggested in yogurt. When I buy dried cranberries, I like to put them in oatmeal and plain yogurt. Love your videos
I have a small panic attack every time I need to remove food from a dish like that, I can only imagine how stressful it would be when cooking for royalty.
It's the kind of thing that'd wake you up in a cold sweat years after the fact.
Please showcase more recipes that you usually prepared for the palace. I love the Royal family. I am happy to have found your channel. Looking forward to it. Thanks in advance. Happy cooking!
Now I got the summer pudding song stuck in my head.
All 5 seconds of it, just keep playing on loop.
LOL
"The cherries are going to take a little longer to cook..." ugh... that is so true. Friggin cherries man...
Think I'll be a little adventurous and try this with some of my region's berries this weekend.
The bowl looked a little small at first but when Darren finished the process, it was perfect!
That looks so good. I am going to try it.
Some people use cling film in the mild to unfold the pudding easier. I like his way better because no plastic is being used and going into the body.
The Best Ever summer dessert. It filled a Rubbermaid "TakeALong" 6 cup plastic bowl perfectly. Served 8 friends who all said it was delicious.
I want everything I eat to be "gorgeous"!
It’s a marvel ! I will try as soon to do the recipe at my little level. But now, I want really to taste it very soon because « j’ai l’eau à la bouche » comme on dit en français ! Thank you so much !
Hey, I love you're channel. Im an aspiring chef and It delights me to see what people can do with food, its so inspiring. And the meals look soo good!
This Yankee is loving a taste of the mother country!!
Please recipes for sandwiches at tea time! Thank you! Love your videos
Looks delicious ,thank you for a simple healthy dessert .
We need Darren on a tv show!! That would be iconic 🥳🥳🥳
What a humble chef more subs to come!
The last time I was this early Chef McGrady still had a moustache.
LOL
Summer pudding, one of my absolute favs😋.
That pudding looks so refreshing.
Wow I need to get a mold so I can make this!!
Hi, Darren. So fun to watch your videos and do these great recipes. My favorite UK sweets and recipe ideas are VICTORIA SPONGE, the old-fashioned FOOL, SYLLABUB, TRIFLE (!) and ETON MESS. Some day when its colder, perhaps cook up a Sunday Roast with Yorkshire pudding? Oh. Yum! THANKS SO MUCH!
Did the royal family ever have a takeaway or a version of a takeaway not posh either but just like a Saturday night feast fest
Imagine the Queen ordering in a curry on a Friday night. Lol
Gigi Dodson I was kinda thinking a dinner kebab and chips and plenty of garlic mayo after one too many sherries 😂😂
She loves fish and chips while at Balmoral www.thesun.co.uk/fabulous/9840361/the-queen-orders-takeaway-fish-and-chips-balmoral/
She’s also had a donner kebab after a dare from Prince Harry!
www.suffolkgazette.com/news/queen-doner-kebab/
Kyle somehow I don’t believe the doner kebab ... I don’t think the royal protection squad would allow a takeaway driver in his Nissan Micra to just drive into the estate ...
Matthew Leahy bet she has a good ol fakeaway chippy tea though 😂
Chef, this looks amazing and like a perfect snack after a day spent at the pool in the heat! I can’t wait to buy my mold and make some!
CHEF DARREN MAKE MORE VIDEOS!!!! IVE WATCHED ALL OF YOUR VIDEOS ALREADY... I CANT WAIT.. HEHEHE
Would you please do a video on the Sticky Toffee Pudding? It sounds delicious.
He already did. It's on the Delish Channel.
ruclips.net/video/sGSRzXPpHfE/видео.html
Now thats a proper dessert. Yummy, one of the best Ever! Much nicer than wet bread and berries.
Oh, My! ❤️ Will make it for my husband's birthday this week!
I love love love your videos chef 🤩
I’d love to know what the Queens most requested elaborate dish is.
Human
That looks delicious! I’m hopefully gonna try making it soon :)
A custard poured out on top of the pudding would be good as well
Turned out delicious thanks
My parents are visiting me this weekend, and this is the perfect dessert to make for them. Thanks! I’ll be trying it out
As a diabetic I don't do desserts. This with splenda must be fantastic.
mmm summer fruit desserts of any kind - drool drool drool :)
One of my fav summer desserts. I use my English gran's recipe, and I use her pudding basin. Everyone loves it.
It looks very refreshing!
This is like making strawberry shortcake with strawberry Jello.
thank you sir, this has been a great help. x just made two. one for my neighbours and one for me.
Glad you made your own channel :)
I love it my dads been making it for years
This is kinda the same pudding colour but in delicious blended juice smoothie that I drink with whey protein everyday
