    A lot of people seem to oppose the idea of summer pudding because ‘soggy bread’. I can tell from this that they haven’t had one. It doesn’t taste of wet bread at all, it is really delicious especially with some cream.

      People seem to think the same about tres leches cake. My english teacher from middle school seemed disgusted when I gave a piece to her to show my appreciation and she even said it was soggy like wtf. Some people are just ignorant like that.

    Made this using slices of a lemon pound cake instead of bread, we were out of bread, he is right the vanilla bean paste makes all the difference and I served it with a scoop of vanilla ice scream and the mint leaves, it was such a hit with my family !

    I love a summer pudding, and the first time I had it, I believed that the white bread was vanilla poundcake. Anyone who thinks this might taste of fruit soaked bread has 100% never eaten it. Hands down, one of my favorite puds whenever I am someplace that has berries in season! And like Chef McGrady, I enjoy it with a drizzle of unsweetened cream. Anything else is too, too sweet.

    I'm from Piemonte, Italy, my grandma's best friend was from England she would come the summer, they both were great cooks and always made this, they used to put custard cream together and crumble.... so good

    Hi Darren, I wanted to tell you how much I love your videos. I grew up in Ascot, England as a child and then moved to America. Your videos of you cooking English dishes remind me of my childhood and are very comforting to watch. I really love the one of Princess Diana and her stuffed bell peppers, sounds lovely. Do you ever make fresh pasta? I'm really interested in Italian cooking and have had difficulty with the consistency of fresh pasta dough. I would love you to do a video all about making fresh pasta if it's a possiblity. Please keep creating. Your cheery and enthusiastic personality would lift anyone's mood.

    Tried this yesterday with some variations. (Being in quarantine we make do with what we have.) I'd made some pound cake that turned out to be very dry, so I trimmed and sliced it thin to substitute for the bread. For the syrup, I had excess homemade raspberry sorbet that I melted in the pan before simmering the fruit. No blackberries but I had some fresh peaches, strawberries and raspberries. You are right - be sure to not overcook the fruit. Lesson learned. Very tasty, but I think bread would result in a much lighter pudding.

    Just made this last night for the family. My kids are wary of my experimental recipes, but this one was a hit. There is nothing left. Absolutely fabulous flavor, even with berries and fruits available in the winter. Thanks for sharing the recipe!

    I visited England 3 times and loved the light fare of the desserts. I throughly enjoyed making and eating Summer Pudding! The children loved it too!     One of the joys of living in CA is that strawberries, raspberries, blackberries, and blueberries, and cherries are available fresh the whole year long at quite reasonable prices, even when cherries are imported from other countries.

      But you don't wrap them in wet bread do you? Honour them with a little bit of cream, nothing more needed.

      @@maureendavidson4635--Sometimes even a bit of cream is overkill. I prefer nibbling on summer fruits just as God made them...washed, drained, and simply luscious.

    This is one of my absolute favorites! I took it to my best friend’s family when she died of Covid. They loved it and I bought the stuff to make it for Easter…is us just amazing!!!

    Darren, thanks for reminding me of this outstanding dessert. An English friend of mine made this and served it with Creme Anglaise mixed with a dash of cognac. It - was - to - die - for!
    Now that berries are coming into season I'll be making it myself.

    Vanilla extract is fine - as long as you buy decent quality stuff. What appears to be really bad is vanilla essence, most of which appears to be a concoction of chemicals.

    OK darren yes I adore summer pudding too, but also rhubarb crumble , bread and butter pudding, apple cinnamon pie, lemon meringue pie, sticky toffee pudding, my mum made a wonderful jam roli poli and so on paulax

    I omit the strawberries as I am allergic, but I make Summer Pudding for Christmas here in New Zealand. We actually have it for breakfast - it's only fruit, bread and cream, after all! For a more unique festive touch, I use a Panetone - which does make it a dessert! One of my all-time favurites, too, Darren!

    I make my own Madagascar bourbon vanilla extract which has all the vanilla beans in it and it's ABSOLUTELY delicious!!!

    I confess I've never liked the bread in summer pudding so I use sponge fingers instead - but no sugar in the fruit to compensate. Otherwise, I make it pretty much the same way.

    I make this and have always loved it. I use a steamed pudding basin as it’s a little larger and always turns out brilliantly. Thank you for showing this

    That summer pudding looked delicious, o see why it's a RF summer favourite. I was thinking when you showed the variety of berries, how good the leftovers would be if someone used them as a compote over waffles , oatmeal or as you suggested in yogurt. When I buy dried cranberries, I like to put them in oatmeal and plain yogurt. Love your videos

    I have a small panic attack every time I need to remove food from a dish like that, I can only imagine how stressful it would be when cooking for royalty.
    It's the kind of thing that'd wake you up in a cold sweat years after the fact.

    Some people use cling film in the mild to unfold the pudding easier. I like his way better because no plastic is being used and going into the body.

    The Best Ever summer dessert. It filled a Rubbermaid "TakeALong" 6 cup plastic bowl perfectly. Served 8 friends who all said it was delicious.

    Hi, Darren. So fun to watch your videos and do these great recipes. My favorite UK sweets and recipe ideas are VICTORIA SPONGE, the old-fashioned FOOL, SYLLABUB, TRIFLE (!) and ETON MESS. Some day when its colder, perhaps cook up a Sunday Roast with Yorkshire pudding? Oh. Yum! THANKS SO MUCH!
