    The veggie tacos are brilliant because I do come home and I want something I can make in 10 to 15 minutes and be done. I can’t wait to try making the chickpea tuna. I’m very new to using tofu and cooking tofu so this looks simple enough for me, LOL! I am a sauce fanatic!

    I also like making chickpea and avocado mash sandwiches! One can of drained and rinsed chickpeas, 1 ripe avocado, fresh lemon juice to taste (probably around 1/2 a lemon worth), celery salt and black pepper to taste. You make it in a food processor and then serve it on grainy bread with sprouts and tomatoes.

    Hummus in the chickpea salad? GENIUS! I love chickpea salad but I don't really like using Vegenaise much anymore and avocado gets so brown and gross. I can't believe I never thought to use hummus! Making this melt today! Thanks, Nikki! 💗💗💗

    I'm going to try your miso sauce!! Thanks for sharing. I'm glad I'm not alone in having chips and salsa for dinner :) , But like you said, I don't feel the best the next day.

    Another very good video! I really appreciate what you are offering on your channel. I find when I feel lazy and unmotivated to cook that your recipes/videos provide the gentle inspiration I need to get back on track. Everything is presented so well and seems so accessible that I want to make something, instead of just watching while I eat popcorn.

    WOW GIRL! JUST WOW!
    when i saw the bowl full of your tuna salad smoothed over at the top & all ready to put in the fridge for later, i thought WOW!
    im gonna make a double (or triple) batch of that tuna salad & its gonna be the base of all kinds of quick-cos-im-zausted-meals & snacks for a typical working week! Jumping out at me first is the idea of filling the gap of celery sticks with this tuna salad ~ instead of nut butters.
    ooh and also, adding it to warm pasta! like... shaking half a cup of the tuna salad in a jar with a few big spoonfuls of the hot pasta water...then pouring it out onto my fave spiral noodles?
    or just adding half a cup of the tuna salad to my next bowl of hot mac n cheese! yum!
    and and instead of storing plain baked potatoes in my sunday night meal prep, i'll scoop out the baked potato centres, then mash them with this tuna salad, & spoon it all back into the spud frames. i'll happily eat a couple of those (cold) for a work lunch, or even better ~ air fry a few for an easy dinner after a long day! thanks so much for the recipes and the inspiration mate. YOU ROCK!

    The tacos look amazing and easy. It’s funny I always want to make them but don’t because I feel like I need 15 ingredients. You make it look doable! Also, that “tuna” melt looks amazing! Please make more of these quick and nutritious dinners. I am definitely that person who loves to cook but is often too tired to tackle something that takes an hour. Also, this video had an artsy/vintage vibe that I love!

    Hi Nikki! Thank you for the video and recipes, I am looking forward to the tofu with the sauce!
    There is something weighing very heavy on my heart and mind and I am wondering if you might be able to give me some advice? I have to take a lot of western medicine because I have a very rare cancer that I got when I was about 10 yrs old I am now 58 yrs old . I am very very fortunate to be alive and am incredibly grateful. I was exposed to Malathion when they sprayed our whole area and they told our parents to keep us in for about 1 hour after they were finished, then we could go play outside, within a year I had the beginnings of a very rare cancer that manifested on my skin.Long story. Bottom line is that I’ve been vegetarian and at various times macrobiotic for about 30yrs. I have been on an awesome journey that has been an amazing gift, unfortunately though I have in the past and do take medication now that I assume is tested or has been tested on animals. It is heartbreaking to think of and almost unbearable for me to be a part of. My compassion and empathy is why I don’t eat animals and all that that entails, but here I am taking medication, it’s so contradictory to who I am, yet I will die without it. My heart aches, my chest literally hurts, I’m soooooooo sad about my choice, I don’t think my life is more important than any other sentient being, I thought, but here I am having made that choice. I’ve been watching your videos for a while now and admire greatly your heart, mind and spirit. If you have any words of wisdom I would be so grateful❤️🙏🏼❤️Kathy

      Kathy! I feel for you sweetie. You are doing all that you can from what you can control outside of taking the meds you need to survive on! Please don't beat yourself up over it. Intention is everything and I can tell that your heart is definitely in the right place. I wish you lots of light and well being! You are inspiring 🌻🌺

    Excellent video & recipe's. It was interesting that you used hummus instead of veganaise instead in the vegan tuna melt. I will definitely try the vegan tuna melt because I haven't eaten tuna since being vegan and hopefully never will.

    Omg this looks so good. Do you recommend that food processor? I see a lot of reviews on amazon that says it is very hard to clean

      Yes! I use it all the time! I think I might have even reviewed it back in the day in an old video lol it’s not hard to clean at all if you get in the habit of rinsing it with warm water when you’re done using it before it gets a change to dry and stick on the blades. I just rinse it clean with warm soapy water and it’s good to go !
      I love it for chopping things quickly. I’ve also used it to make my quinoa salads with nuts, and herbs, and vegan oatmeal. I’m not sure which video that’s in but I make it a lot. Also for my holiday nut roasts etc, so many things. It’s awesome but note, it is small so I sometimes do larger things in batches but I like that it’s small because I have a small kitchen ☺️

    What brand is the Miso paste? And where did you find it? We don’t have miso ANYWHERE in my town so I will have to order it online most likely . You always inspire me to take the extra time to make something nourishing and not just eat vegan ice cream lol XO Davita

    Great recipes- will definitely be trying some! What’s up with the no oil deal? Healthy fats are good and much needed for everyone, especially vegans! And they are absolutely necessary for pregnant and breastfeeding mom and small children (especially for healthy brain development).
