Welcome back to a new vlog! In this video I'm sharing what I eat in a day on a work day! It's also a day in the life of a food blogger video, so you can see what I eat as a plant based vegan on a day when I'm working from home. I hope this video gives you some good vegan recipes and healthy meal ideas, and that you enjoy the behind the scenes glimpse into a day in my life! Comment below and let me know what you think! Marinated Tofu Recipe (recipe listed, full blog post coming soon)
For the marinate:
1 pear
1/2 yellow onion
2 scallions, plus more for garnish
2 inch piece of fresh ginger
3 garlic cloves
1/2 cup water
1/4 cup soy sauce
2 tbsp sesame oil
1 tbsp mirin (seasoned vinegar)
1 tbsp sriracha
1-2 tbsp maple syrup
salt and pepper to taste
For Serving:
1 block firm or extra firm tofu
white rice
cucumbers
avocado
toasted sesame seeds
Blend until smooth. Then cut a block of firm tofu into planks or cubes and pat to remove any excess moisture. Pour the marinade over the tofu and chill for 1 hour or overnight.
Then cook in a lightly greased grill pan for 2 minutes on the first side, or until the tofu easily releases from the grill. Then flip and cook 1-2 minutes on the other.
Warm the remaining sauce in a saucepan or in the microwave and then pour over the tofu, rice, and veggies. Garnish with sesame seeds and more scallions and enjoy!

What does the nutritional yeast do for the French toast??
Good question! It gives the milk mixture a little more creaminess and depth of flavor. I found it's too light without it. Hope you enjoy!

I'm so confused about the nutritional yeast on the french toast. I cannot imagine this 🤔
I know it seems odd but it adds depth to the milk mixture and makes it taste creamier. It doesn’t taste like cheese I promise lol
